Veggie Sausage Omelet Muffins


This post is in homage to the "girlies" that make me laugh everyday and who feed me with their wonderful, nutrient dense eggs. The raising of chickens has been a wonderful experience that I would encourage everyone to do at some time in your life. I have always had dogs, but these little girls have taught me a ton about what it takes to raise an animal that you get something from other then love. Dogs are our companion animals but there is a lot to say about these girls who not only give me food but that also gives me a source of togetherness and affection. While my chickens are not the cuddly type that come and sit in my lap (I wish they were,) they do depend on me for their daily needs and in turn they give me a lot of love and great eggs.

Upon meeting me, most people would not think that I am a chicken person or that is what I have been told. (I have never really been sure what a "Chicken Person" is.) When I talk to my anatomy students about "my girls," they are taken aback. One class even requested pictures to be sure I was not pulling one over on them. Recently, in a cab ride when I was all dressed up, I mentioned having to take care of the chickens before I left home and got the strangest look in the rear view mirror. Fortunately, that led to a really enlightening discussion. And to top off all of the "chicken shock", I think my family thought I lost my mind when I told them I got chickens.

While all of these chicken discussions, have been somewhat humorous, most people don't get it till they see the girls. Several of my friends have shown up at my house and have seen these funny girls waddling behind me, chattering the whole way, as we water the flowers in the back yard or patiently waiting while I pick them a tomato from my summer garden. They are always there to tell me their funny little stories and to see what we are going to do next. They have become the #1 attraction at my house. Some bring them an apple, most want to check for eggs and even my Dad (who I am sure thought I really lost it) has had a few laughs due to these girls. Even though he might not admit it, he enjoys checking their nest when he visits.

A lot of people say, "they are just chickens." And I can't argue with that, but what makes anything a "just?" We are JUST people!  I will admit that chickens are not the most intelligent creatures but that doesn't mean they don't deserve kindness and a happy life.  These girls are a perfect of example that if you value something, respect it for what it is, give it a happy place and show it love, that all of those feelings will be reciprocated. It is an everyday confirmation of the good in life and in others,; no matter how small.

Freezing Tomatoes




I LOVE THIS RECIPE!!!

This is the most simple way to save tomatoes that I know of. When I am feeling really lazy (which is often!) I just freeze a bunch of tomatoes rather than messing with canning them. For whatever reason, most people look at me like I am crazy when I say that I do this, but it really works. This is a trick that I learned from my Mom and  it come in handy when the winter gets cold and you want to make a chili or soup. Just get out the frozen summer tomatoes and run them under really hot water. The skin peels right off in your hand. Then into the pot they go. They are way better then anything that you can get out of a can and remember- You grew them! So go ahead and feel accomplished! Sometimes, the little things make the day a little brighter!

(I admit these were hard to take pictures of! Usually I take all my pictures outside and when I took these frozen guys out in our 90 something degree heat they instantly got a little frosty. They don't look like this in the freezer, but I guess it does get the frozen point across.)

Pickled Cherry Tomatoes




As we all know, it is tomato time of the year!!! Despite the oppressive heat here in South Carolina, this has been a great year for some awesome tomatoes. I am sure that I am not the only one that is feeling a little overwhelmed by their garden goodness. For those of you that garden and stand with me in your love for all thing tomato, I am planning on posting a little tomato series here. Some of these recipes will help you save a lot of those tomatoes for the cold winter months when you are dying for that taste of summer sweetness. Other recipes will allow you to enjoy the tomatoes right now when they are at their juiciest and most abundant. However you want to look at it, this is the month of the tomato and your chance to savour every bite. In just a few months, we will all be wishing for the day in spring when we can plant again and anticipate what mother nature will give us.

Crockpot Madras Lentils


As of today, I am not longer a partner in my chiropractic office. It has been a hard transition. Since I was in middle school, I wanted to be a chiropractor with her own office. In 2004, with a partner who was also my husband, I achieved that dream. It was not a small task for two people with no real experience. We had the backing of a local bank that believed in us and family support, but other than that we were very much Newbies! It was a grand endeavor and something that I am still proud to say I was part of.  At the beginning of any adventure, there is a lot of adrenaline and excitement. This and the great people of Greenville made us a success in business for many years. The problem was that there was no relationship in my marriage except business. No personal life. Work was 24 hours per day. This was felt very deeply in 2008-2011, when health care began to change, the housing market collapsed and banks suffered. Our business was affected. All of this work stress was brought home every day and it crushed the last inkling of any kind of personal life that was left. Despite my best efforts to stop this pattern, it worsened. It was taking everything out of me as a person, a chiropractor and a wife.

In 2011, I finally made a change. In 2013, I divorced my partner and put into works the ability to leave the practice that in the past years had caused me so much pain. February 27, 2015 was my last day seeing patients. Today, at a meeting, I officially signed over my shares of my business and resigned as corporate president. It was bittersweet.  In these past 2 months, I have felt at peace with my decision and have even looked forward to my last day. Today, signing those papers took a huge weight off my shoulders. I am happy! For the first time in probably 5 years, I am happy!

So where does that leave me? That is still up in the air. I will always be a chiropractor and I am currently an instructor at local universities. But overall, right now, I am celebrating my decision and strength. I am taking some time to nurture ME! I know that can not last forever and I don't want it to. I will be back in some large way soon. I am not sure what capacity that will be or in what city, but I know that I have learned a lot and will use all my experiences to take the next big step.

Old Fashioned No-Bake Cookies

I am iced in my house.  NO, I am iced in my house in SOUTH CAROLINA!  Ughh!



 Did I go to the store before this event? Sure I did! I have plenty of wine, cheese, crackers and smoked meats. I know- no bread? No milk? What am I going to do with that? Well, it seems that I forgot something! Or at least have a sudden craving for something because I have no access to it. (Isn't that how it always works?) Maybe I am just bored, or maybe I am reading too many food blogs, but..... I NEED CHOCOLATE! And I don't have any. Well, I don't have anything other than a jar of Nutella, chocolate chips and cocoa powder. What can I make, what can I make???? No- Bake Cookies!!! How simple and quick! When you gotta get your chocolate fix there is not time for baking cakes and whipping up a perfect ganche. Nope!



With a HOT cup of espresso... hmmmm.... I think this is the best part of my day.

I also hope tomorrow I am FREE!!! It is hard for this Pennsylvania girl to be stuck in her house because of weather! But if I am still iced in... wonder what I will whip up in my kitchen tomorrow. Stay tuned!!

Sweet Potato Hummus





Well, this recipe came with a lesson! It seems lately that I have been super busy and feeling like I am not getting enough done around my house or in my private life. So on Thursday of this past week, I made a list. Now for those of you that really know me you know how I feel about lists. They make me feel like I am going a bit CRAZY!! I like to believe that I am highly educated, intelligent and together enough that I do not need to put on paper what needs to be done. Also growing up in my parents house we lived by lists. My mother is the queen of lists. She even called yesterday to say we have to go over lists for the upcoming beach trip. I HATE LISTS!

But... in a desperate moment this slightly overwhelmed multi-tasker finally gave in and wrote it all down. In all efforts to be ambitious and accomplished, (are you seeing a serious Type A problem here!!! Ugg....) as soon as I got home on Thursday, I set about completing tasks so I could cross off them off that dreaded list. I had laundry going, I had remade all of my bed, dinner was in the oven, bills had been paid, and I set about peeling sweet potatoes for this recipe. Although I know potato peels don't do well in the garbage disposal, my mind was on everything else I could get accomplished before bed, and I hit the switch. Down they went but the water did not..... #@&*!!!!! I had just blocked the drain and in the long run stopped all progress on completion of my list!!! For the rest of the evening, I had only one task!! I worked on the drain. Eventually, with a good friend's advice and instructions, I got it unstopped but it was almost 10 pm.  Out of desperation, I promptly put the offending list in the drawer, poured myself a glass of red wine and plopped myself in the bath tub. Tasks complete for the night!!!

Oh, so what is the lesson?? Don't make lists!!!

Vanilla Extract


So, this is just a simple project that makes great gifts and can save you a little money. I decided to start making my own vanilla extract because as you might guess, I go through a lot of vanilla! I prefer to use real extract, not imitation. As most of you know, that can get a little costly. So, after some research, I decided to start to make my own. I have been really happy with the results. The best part of this recipe is that it only takes 2 ingredients: vanilla beans and bourbon.  You might have to go out to buy the beans, but they are easy to find in any natural food store and you will definitely get your money's worth as they last for a long time.  If you are like me, I am sure you have bourbon or whiskey in your house. If not (let me know, cause I won't be visiting,) go get you the biggest bottle! You will need something to sip on while you are waiting for your extract be ready to use!

Bourbon Balls

 


What is better than spreading a little holiday cheer with an alcohol laced cookie?

This recipe is one of my family's official Christmas party foods. This is my Gram H's recipe. She started this tradition by taking these to her family events and Christmas parties. My Mom also made them and took them along to her holiday gatherings. I remember her taking them to her faculty Christmas party every year because fellow employees were waiting on them. Some years, when I got a little older, I actually made them for her to take. Now, I continue to carry on that tradition. Every year, I find myself making these little cookies because they are easy and people request them. Usually, at a party, they are one of the first things to go! I already made one batch of these this year, but will be whipping up some more for this weekend. They are a good thing!

This year, say "Cheers!" to your friends and loved ones with a cookie!

Chocolate Pots De Creme



Happy, happy, happy! What makes you smile? This dessert does it for me. I do not like to classify myself as "typical" anything but in this case, I am a "typical chocolate loving girl!"  Go ahead judge me! You can't get me down with one of these cups of chocolate crème in my hands and maybe all over my face. ;)
Anyway... on a more serious note. My life in general has been really happy lately. Fall is a great time of the year. After the heat of summer, it is time to get outside, enjoy the beautiful fall leaves, the company of friends and a great dark beer. I am hoping that you are finding some Happy in this season as well.  Stop, look around you and find something beautiful in every day!!

Slow Cooker Chana Masala




I have become addicted to this dish and have been buying the pre-packaged, prepared version that is microwavable. It is one of my new go-to, easy foods that I look forward to making after a long day. The fact that makes this meal so convenient also makes me a little wary of eating it too often. The drawback- microwaving food in a plastic bag. It seems...hmmmm... not so natural. Right? We hear so much about carcinogens and PCBs, yet these options are still available, Why are they so alluring? Because we are all busy and need food fast!!! While microwave beans and rice are still more healthy than the "fast food" alternative, it still is not a prime food choice. So I decided that this would be a great recipe to make in bulk with fresh ingredients. No.. it is not as quick but, the truth is, one Sunday afternoon before I went out to work in my garden, I threw the ingredients in the crock pot and in about 6 hours it was finished. Not bad when you consider all the "yucky stuff" that you are eliminating.  Feel good about yourself and your food and serve up another bowl.

Baba Ganoush



So what do I do when I am stressed and feel like life is not going my way??? Anyone paying attention out there??? I cook!! And in this case, I knit as well. (Uh Ohh! that is not a good sign.) This weekend has been a trying one but unfortunately my life has been this way for so long that I know that "busy is best." So I planned doctor's appointments, craft parades, event with friends and lots of activities for this weekend. I have been fairly successful.... NO! I am proud of myself and I will say I have done excellently, considering. (If you are lost, you have not been reading often.... shame! Lol!)



So this morning when my wonderful, sweet pups who love me dearly, woke me up at 7am  on my only day off, I needed something to do. (Do you sense the sarcasm here?) Thankfully, one of my employees and friends brought me 6 Japanese Eggplant and boy did I have plans for them. Here is the outcome and it is fabulous! Once you eat this you will never order Baba Ganoush at a restaurant again when you can make it so easy! I promise. It is smoky, garlicky goodness!

Crunchy Pecan Blackberry Cobbler








Garden Goodness Part 3

What is better than some blackberries? Now you all know I love some blackberries. And I know.... from feedback that I have gotten from some of my readers, last year's blackberry story made some people cry (see Blackberry Lemon Thyme Jam.) That was not my intention but it does make me feel nice that I can really reach you in that way.

This recipe came up as a way for me to say Thanks. As some of you know, my life has been a little upside down these past few years. And while that crazy is coming to an end soon. I am sure a new crazy is just around the corner- that is life right?? Well as a single girl in a new neighborhood, all alone, I have had some learning to do. Thanks to my Daddy, I am a well rounded girl who needs little help using most tools, changing a tire or doing a whole range of household "typically" male tasks. As great a man as he is, he made sure my little sister and I  knew how to survive without a man. And strange to say but since I have been married I have really appreciated that (ironic, huh?) Now, as I live alone again, I appreciate this learning all over.




Well, I did not make this recipe to say thanks to my Dad. No, I make him a lot of other recipes to show my love (a new one is coming next week. I can't tell yet in case he is tuning in.) There is one thing that I can not do with my Honda Accord- haul things. Lucky for me, I have moved into an older neighborhood that has some really great people in it. You know, the kind that when you move in come down and introduce themselves and give you their name and phone number. Well, these neighbors are awesome. They know I am a single girl and they check on me. They brought me a light to put in my garage, that senses when I am home, they send bones home for my Golden Retriever Charlie and as they say here, they are just "good people." (I love this local saying.) Recently, I went to a local store and got a great deal on a new coffee table. Unfortunately I had no way to get it home. I purchased it with the promise that I would come back for it at a later date. As I was pulling in to my driveway, I saw my neighbors and thought should I ask or not. Uggggg..... I hate to ask!!! But I did and they were more than happy to help. They got in their truck right then with straps and a protective blanket and off we went. I was so happy to have them. They always say "honey, you don't owe us anything. This is just good neighbors helping good neighbors." But what is my saying here at Bonbons and Biscotti- "Love Begins in the Kitchen" and for this single girl a little lost in the world right now it is so good to know that she has someone to count on. So, I got in my kitchen and I baked; adding a ton of appreciation and thanks with every sprinkle of sugar.

Summer Tomatoes, Slashed and Stuffed




This is one of my favorite summer recipes. Why?? Because it says my garden is plentiful, the sun is shining and I have so many tomatoes that I am just searching for ways to prepare them. This recipe has such simple, clean flavors that really define summer for me. The taste of homegrown tomatoes is really something to be treasured. There is only a few months out of the year that tomatoes are at their prime and this recipe definitely capitalizes on that flavor. Each of these little buttery tomatoes pops in your mouth and you have the instant taste of summer.

 This is a great appetizer or an amazing side dish. I have made this recipe for many different people and it has always gotten rave reviews. Give it a try!! I guarantee you will be impressed.

Mini Peanut Butter Cup Ice Cream Cakes





So even food bloggers make mistakes..... and this recipe turned out to be one of mine. Every year when we go to the beach, I make my sister something for her birthday dessert. I typically make cupcakes and freeze them, then ice and decorate them when I get there. This year, I spoke to my 6 year old nephew on the phone and he told me he wanted ice cream cakes for his Mom's birthday. He had seen my Whoppers Malted Milk Ball Ice Cream Cake and he was having ice cream dreams. So "Aunt Becky" quickly agreed. How hard could it be?  I already took a huge cooler full of all the dinners for the week. I would make them 2 days before, freeze them and take them in the  cooler. So I set about my task.


OK..... I think you see where this story is going..... After my 8 hour drive to OBX (in typical July heat), I opened the cooler to find totally frozen steaks, chicken and even sweet potato French fries, and there was my perfect plastic container of ice cream slime?!?!?!?!!!! How could this happen? Everything else is frozen... Blah!  As I am dumping peanut butter milk down the drain and picking cupcake papers out before they go into the disposal, my Dad comes into the room and suggests refreezing them. We were way past that point.  "Aunt Becky" had let everyone down. I was not a happy girl, but I was at the beach and no one's feeling seemed too hurt. So, the next day we made strawberry shortcake and celebrated just the same.

Mediterranean Tortellini Pasta Salad




Who does not like a picnic? Whether it be in a park or on your back porch, this is the perfect time of the year for al fresco dining. In the summer, I try to eat my dinner on my back porch every night. I just love it. Listening to the birds and taking my time with every bite; it has really become the best part of my day.

This recipe was made out of things that I had in my fridge and was supper simple. Feel free to substitute any alternative ingredients that you like. If you don't have capers, add fresh herbs. It was filling and fresh and I think quite pretty. I ate it for dinner on my back porch then took the rest to work the next day to share. Enjoy!

Chocolate Chip Cherry Blondies

 

 

Hi Ho Cherry O! These blondies are delish! As we have already established, cherries are my favorite fruit and always make me think of my Grandma Clarke.  When I saw this recipe and the combo of cherries and chocolate, I knew this recipe was for me. And the best thing about it: "It is EASY." I had all the basic ingredients in my cabinet, had just been to the store and was the victim of good product placement; there were huge bags of Bing cherries displayed as soon as I walked in the door. Sucker!! So, one night after work I made these and I have to admit, I ate 3. I know, I know... I have to go to the beach in 1 week... But don't worry, I quickly  had 2 ideas! I wrapped the rest of this batch up and hid them (from myself) to take to work the next day. They were raved over and did not make it past lunch time. And then, the next night I made a fresh batch to freeze for the beach. Evil?? How?? Muhahaha!!!

Grilled Strawberry Balsamic Brie Sandwich


OMG! This might be the best thing that I have ever made!!

Anyone that knows me knows that I am not a "sandwich kind of girl." I know that sandwiches are portable and convenient to eat almost anywhere, but it is just not my thing. Give me good bread, some cured meat (ie prosciutto or salami) and a little cheese and I am in heaven.  I think one of the reasons that I do not like the common sandwich is because most everyday sandwiches or "sandwich places" use lunch meat / cold cuts / deli meat or whatever you want to call those slivers of fatty sliminess. A slice of deli ham makes my skin crawl in ways that most people can only contribute to creepy crawly things. Can you say fatty, salty, chemical laden and most important of all, did this really come from an animal?

But this sandwich, now this sandwich... I can eat everyday. It has simple ingredients and simple tastes. The sweet strawberries, crusty bread and the creamy, buttery cheese are amazing together. The little tang of balsamic really adds depth and a dynamic to the whole thing. This was the sandwich of my dreams! If Subway would start pumping out something this fresh, I would be the first in line. But instead of holding my breath on that thought, I will make my own strawberry sandwiches. I think I am addicted.....



In this post, I want to pay homage to my Dad who made me this awesome baking board and carved the wooden spoon in the picture. I have toted this board around with me for the past 10 years. It is huge and smooth and perfect for rolling out any dough. It is one of my prized possessions. Remember our motto here at Bonbons and Biscotti- Love Begins In The Kitchen.  I think of this board as a little piece of love I keep with me in my kitchen. It is heart warming to have a little of my family's love around always.

5 Minute Strawberry Cobbler


I have personally declared this Bonbons and Biscotti's Strawberry week. I am sooooo excited!! This weekend I bought a huge basket of strawberries at a local farmer's market and I have been busy in the kitchen. This afternoon after working all morning in my veggie garden I set about the task of making Strawberry Prosecco Jam. I know.... sounds awesome huh? You should have smelled it!!!

After finally cleaning up all my sticky jelly covered pots and utensils, I realized that I had not eaten anything since about 10 am. I quickly remembered this awesome single serving mug of strawberry delight that I had made before and absolutely fell in love with. Yeah.... I know it is dinner time!! Real food?? What is more real than warm strawberry deliciousness all for me. Sometimes we need to celebrate ourselves and everything we accomplished. Here's to Me and a day well spent!!!

Mini Frozen Citrus Pies



Summer is fast approaching! And for me it can not come fast enough! One thing I love about summer is the fact that my back porch becomes my second living room. Most nights you can find me outside reading with my golden retriever Charlie at my feet, blogging on Bonbons and Biscotti or laughing with friends while sipping some red wine. Everyone knows when they come to my house that if you knock on the front door and no one answers, walk around to the backyard and you will find me- on my porch. Every year, I decorate my porch with pots of fresh herbs and flowers and last year my Mom and I went shopping for some great new bright cushions and accessories that make this area the cheeriest place in my house. It really is THE place to be from April till October.



So why am I sharing this recipe? This recipe is the perfect little individual dessert to have in the freezer whenever those surprise guests show up for some porch sittin'. Make these mini cream pies ahead of time in whatever citrus flavor that you like and keep them on the ready. These are refreshing and tart.  They are perfect for an after dinner treat, a talk with a friend or a decadent snack when you have had a bad day. Go ahead eat two! You deserve it!

Whoppers Malted Milk Ball Ice Cream Cake

 

Happy Birthday to Bonbons and Biscotti....

And what better why to celebrate a birthday than with CAKE!!! Not just any cake but ice cream cake- just in time for spring!! There is nothing better than sitting on the back porch in the sun eating ice cream cake- YUM!

OK, there is a reason that I chose this recipe; actually a few. First I love malted milk balls and we have already established my love for dessert, but the need to make this recipe is more about having something that I never got to have for my personal birthdays. Yes, as I mentioned in my previous post, I always had a great birthday with a awesome cake made by my Mom, Toni "the master baker." However,  every year when my little sister's birthday rolled around in sunny June she had a cook out and a Dairy Queen Ice Cream Cake!  I wanted an ice cream cake sooooo bad but as in most small towns in rural Pennsylvania, the Dairy Queen was only open in the summer months. This made a lot of sense for my region. Really, who wants to sit outside on a picnic table and eat ice cream in 2 feet of snow? Since I was born on a blustery day in late January, an ice cream cake (or a cookout!!!) was never a possibility for me.  My birthdays were always rushed events that people came to, ate and left before the roads got to snowy to travel.  In their own way, my birthdays were festive and memorable but to this day... still no ice cream cake. Well, by making this cake I have solved that dilemma. Now I can have decadent chocolate cake on my birthday in January and mile high ice cream cake for my blog's birthday.  I am a happy girl!



I want to personally say thank you to all of you that followed my blog and watched me grow in this past year. As I have noted, I have had some hard days these past 2 years and every time I get a note of encouragement or hear that someone else has read my blog or tried one of my recipes, it warms my heart. I hope that I have inspired some of you as well. Remember Love Begins In The Kitchen... show someone that you love them.
