Sweet Potato and Quinoa Chili


So, as my Mama used to say, it is time to "get back in the swing of things."  Summer is coming to an end! My wonderful vacation in Charleston was just what I needed to transition to this busy time and my time away was fabulous. In Charleston, you can always count on great food, a beautiful beach and amazing weather. But this time, it also included meeting awesome, new people.

Like most of the rest of you, my life is about to become busier, but that is not bad. I am a girl that kinda loves a good routine. For years, I saw patients on a set schedule and taught school at given times. I kinda prosper in that schedule and if nothing else, it makes fun times more appreciated and anticipated.

For me, with that more regular schedule comes more organization and preparedness. Most nights, that includes a lunchbox ready the night before. This recipe is one of my go-to lunch staples!! It is so healthy and full of veggies and protein and it freezes so well!! I also have to note that you will not miss the meat in this chili! It is hearty and delicious! If you are a bit more of a healthy, traditional chili eater (what???) give my Turkey Pumpkin Chili a try. I will admit, I have slipped that one by several chili afficiandos and they had no idea it was good for them! What they don't know.... I won't name names!!

I have to admit, I have been making this recipe for about 3 years and have not shared!  Shhh... Shame on me!!!!  (And some of my vegetarian meals are my most popular!)

Sweet Potato and Quinoa Chili

As usual, I made this recipe in a large quantity and plan on eating some in the next few days, but also will freeze smaller quantities for lunches. This will serve multiple purposes: I have an awesome homemade lunch and I have a built in ice pack! Heat, eat, (check teeth for spinach) and back to work!!!



1 tablespoon olive oil
1 onion, diced
1 hot pepper, diced or one can of chopped chilis
1 green bell pepper, diced
1 yellow or red bell pepper, diced
5 – 6 garlic cloves, pressed
2.5 tablespoons chili powder
2 tablespoon cumin
1 teaspoon dried oregano or a handful of fresh oregano
salt and pepper, to taste
1 can (6 oz) tomato paste
1 can (15 oz)  diced tomatoes or 1 1/2 cup diced fresh tomatoes
4 cups (32 oz) vegetable broth, more as needed
1 can (15 oz) black beans, drained
1 can (15 oz) kidney beans, drained 
1 can (15 oz) garbanzo beans, drained
1 and a half large sweet potato, peeled and diced 
1 cup dry quinoa
A bag of fresh spinach or large bunch of kale, washed and chopped

In large pot, heat oil over medium heat. Add onions all peppers, cook until soft (about 7 – 10 minutes). Add garlic, cook for another minute or so. Add the tomato paste, chili powder, cumin, oregano, cook for 2 more minutes stirring constantly. Add tomatoes, broth, beans and sweet potato, stir until combined. Add quinoa, bring to a boil, reduce heat, cover slightly ajar and cook for 30 -35 minutes, stirring often as this may stick. At this time, add spinach or kale and cook until wilted. No more than 5 minutes. Chili is ready when sweet potatoes are tender and greens are soft. Add additional water if chili is too thick for your liking. This chili is great right after it is finished or you can use in later in multiple ways. As I stated, I like to freeze individual portions for lunches. I have also used it as a side dish with fish or chicken.

Slow Roasted Tomatoes and Herbs for Freezer Sauce



Tomato salvation #2. This is one of my all time favorite ways to save or "put up" (as they say down south) tomatoes. And this one involves those prolific cherry or grape tomatoes that seem to pop up overnight. I have literally been picking 2-3 quarts of these per day but maybe that is my fault. See... I have this theory that if I make my garden just "a tad bit bigger" every year..... I have to mow less grass!! Yes, I know. What reasoning! But I think in the past 3 years, at this one house, I have cut out mowing maybe 3 extra feet on the one end of the garden. Wow!  Every inch counts for me when it comes to mowing grass. I hate mowing! In case you didn't notice, it just comes back..... And in the South Carolina heat, that just means another day dripping sweat at 7 am before the real scorching temps set in. So instead of mowing that extra little space, I prefer to can, freeze and preserve these little jewels. They are worth the sweat to plant, nurture and pick because I get to enjoy them all year!!

My backyard better watch out .... in 10 more years I won't have to mow grass.

Pickled Cherry Tomatoes




As we all know, it is tomato time of the year!!! Despite the oppressive heat here in South Carolina, this has been a great year for some awesome tomatoes. I am sure that I am not the only one that is feeling a little overwhelmed by their garden goodness. For those of you that garden and stand with me in your love for all thing tomato, I am planning on posting a little tomato series here. Some of these recipes will help you save a lot of those tomatoes for the cold winter months when you are dying for that taste of summer sweetness. Other recipes will allow you to enjoy the tomatoes right now when they are at their juiciest and most abundant. However you want to look at it, this is the month of the tomato and your chance to savour every bite. In just a few months, we will all be wishing for the day in spring when we can plant again and anticipate what mother nature will give us.

Herbed Beet and Goat Cheese Salad with Palmetto Olive Oil Company's Tuscan Herb Olive Oil



Love and support comes in all different forms and these past few weeks I have see a lot of that. I am not just talking about Valentine's Day. I am talking about every day little gestures that let you know you are important in someones life. In this way, I am fortunate!!

As you know we had our HUGE Icepocalypse and it seems like one of those weeks when no one has gotten the motivation back to do much of anything. Unfortunately for me, I have been busy on this computer searching for my future and closing up last minute things from my past. Last weekend, thanks to some really great supportive friends, I had a cleaning out party!! They surprised me by not only the brute strength of moving boxes but with flowers and mimosas. Mimosas make all things better!! All girls know that! Quickly, with their liquid courage, a job that seemed overwhelming was almost fun. Almost... Well, anyway there was a lot of laughing and even more encouragement. It feels good to be loved!


So, a little bit about the local product used in this recipe. On my birthday an amazing person went out of their way to drop a gift at my door so I would have something to open on my special day. Sweet, huh? It made my so happy!! The very thoughtful gift turned out to be this fabulous Tuscan Herb Olive Oil from Palmetto Olive Oil Co. here in Greenville, SC. I am obsessed with it!! I am using it on everything but at the same time trying to save it for only the best entrees. Lol! The other day after I got done tossing fingerling potatoes in this my hands smelled heavenly and were so soft that I debated using at as bath oil.

Joking, of course! Hmm... maybe!

Sauerkraut and Potato Cheddar Pierogi




Today is January 25th and it is a day to be celebrated!!  I got to call my Dad for his birthday!! In August, that was something that I feared would never happen again.

This is the reason that you have not heard from me in a while. As you know, I started this blog in a time that I was going through some hard issues. I have blogged through the separation of my marriage, my divorce and all the heartache that comes with separating that life. I have blogged through finding new love and all the greatness and adoration that goes with that. You have seen me in my highs, my lows and my appreciation of multiple people in my life. I have held little back!! That was the reason for starting this blog. From the very beginning, I have said that cooking is my therapy and MY LOVE begins in the kitchen. This blog has been an outlet for me to speak in times when I needed to get thoughts out and until this time, I have not had any problems with that.

 I have learned to realize that a lot of people don't deal with feeling and emotions well and can not express to others what they want and need. I see this daily with my patients who hold things in until their problems express themselves physically and this lack of feelings has been a problem in the relationships of my past. I have worked diligently to be able to say what I feel when it is pertinent, but, nothing has stopped me in my emotional tracks like this August.


This August my family experienced an event that shook who we were. With out much detail, my Dad became incredibly sick very suddenly and was hospitalized for a significant time. The details are not important and quite honestly too much for me to talk about. But since that time, I have not been the same person. None of us have! In just a few days in August, everything changed for me. Since August, we, as a family have been collectively holding our breath... waiting, hoping, praying and whatever else it took! I have learned there is one thing that happens when you hold your breath. You lose passion and desire to do anything... but wait and hope. That is where I have been. Kind of suspended in time... waiting! I am afraid when my phone rings. I am worried when it doesn't. A lot has happened since August. And most of it I have had little influence on nor have I had the power to create (which I hate to say.) Time has passed, for me relationships have been lost and we are still taking it day by day. I am in no way saying that this struggle has been mine alone. My Dad has had the biggest fight and once again in his life has come out strong, but we have all taken some burden in this ordeal.

In some ways, this past month has been healing for me. I feel like I have rejoined a part of my life. Since I live a far distance away, I was able to take a breath in this situation when I got to spend an extended Christmas holiday at home. It was so empowering to see the progress firsthand. It was good to talk and appreciate and love the people most important in life- family.  It was good to just be present in someone else's life who has done so much for me. There are things that will never be the same and I am careful to not say some things will be better, because we don't really know yet. But there are some things in life that will just be and how you deal with them will determine your character. If there is nothing else I have learned from him; that is it. We can't control everything, we can't change fate but we can deal with in the most powerful way we know.

Today on my Dad's birthday, I celebrate him and everything he has taught me. I appreciate all the times he stood by me and hope in some way, I have supported him in this past few months. And lastly, I hope he knows I am proud of him. He has come back to us in a way we never would have imagined and has shown us again what strength is.

Pickled Okra



So, my garden is prolific this year and I am picking okra by the bagful. Fifteen years ago, when I moved to South Carolina from Pennsylvania, these furry little pods were foreign to me. I had never seen them let alone cooked one. Around this time, my southern Mema gave me a big bag of these and instructed me to fry 'em up for my dinner. I politely accepted her generosity and then meekly told her I had no idea what she meant. She looked at me and said, "Why of course you don't. Get in this kitchen and I will show you." In true Mema form, there was no official recipe. Over the years, in all the recipes she taught me (and there are many,) her only measurement reference was "ya just add ya a lil' bit" of said ingredient. It was not so much about the measurement, but more about the experience and the feel. That day, we ended up eating fried okra on her porch and watching the world go by. I miss her and everything she taught me about southern cooking and my local area.  She never judged me, or made fun of my lack of southern heritage. She took me under her wing, taught me what she knew and provided a lot of good laughs in the process. She was happy to have me as her granddaughter; regardless of where I came from.

Rebecca's Ratatouille

 

As most of you know, this is one of my favorite times of the year- mid July is when my garden is prolific. That means good food right outside my back door. This year my garden is like a jungle. We have been blessed with rain and sun in just the right quantities to grow tomato plants almost as tall as my 5 ft 6 inch self. I am harvesting tons of vegetables every day and really I have eaten little more than veggies for most of my meals. I have been sharing with friends and neighbors and am really proud of my little plot of earth and what it has given me.



I am happy to say that I have helped these plants grow with no artificial means or chemicals. They are as organic as they come. I only use fish emulsion and compost for fertilizer and a little insecticidal soap and natural bacteria for pest control. It is possible! It is easy!! It is something that I am proud of!! These plants are made to grow and produce. Artificial chemicals are not necessary to MAKE this natural process occur. I know certain chemical companies are really promoting a lot of blogs right now that will use their product to grow their food and therefore poison their recipes, but I can't join that bandwagon. I am proud to know that I am putting healthy fresh fruits, herbs and veggies into my body. I am also relieved to know that when I leave the garden smelling like I just walked through a patch of tomatoes, that is the only thing on my skin. No decontamination shower is needed after picking in my little urban farm. If you are in my area, bring a basket. I will let you forage and then we can sit on the porch steps and eat a warm, sun ripened tomato. Nothing better!!

Congee


At times throughout my life, bad things happen- stress, illness, sadness, etc. When it does, I, like a lot of women I know, begin having digestive problems. As though all the crap (no pun intended) that life hands us is not enough to deal with, now I need to feel like I have food poisoning or some horrible flu! Well, this week I do! Stress and sadness have reappeared in my life in a BIG way and they have their hands tightly around my digestive system (and my heart) and they are not letting up!

For most of you that know me, you know that aside from the occasional adult beverage, I do not like to put chemicals or foreign things (medication) into my body.  I am a strong advocate for health through whole foods, nutrition and supplements.  I am also a firm believer in listening to your body and using the symptoms it gives you to make a change. There is more and more proof that stress brings down immunity. In these hard times, it is best to listen to what your body is telling you and give it what it needs to reestablish health. That is what I am trying to do now. Does it make the stress go away? Or change a sad situation? No! Sometimes only time will do that, but I have learned first hand over the past few years that without your health you have nothing.  At times you have to step back, rest and nurture YOU! No one else will do it for you! The hard times will come and go and then come again, but as I have proved to myself before, I will still be standing when they do!

Slow Cooker Chana Masala




I have become addicted to this dish and have been buying the pre-packaged, prepared version that is microwavable. It is one of my new go-to, easy foods that I look forward to making after a long day. The fact that makes this meal so convenient also makes me a little wary of eating it too often. The drawback- microwaving food in a plastic bag. It seems...hmmmm... not so natural. Right? We hear so much about carcinogens and PCBs, yet these options are still available, Why are they so alluring? Because we are all busy and need food fast!!! While microwave beans and rice are still more healthy than the "fast food" alternative, it still is not a prime food choice. So I decided that this would be a great recipe to make in bulk with fresh ingredients. No.. it is not as quick but, the truth is, one Sunday afternoon before I went out to work in my garden, I threw the ingredients in the crock pot and in about 6 hours it was finished. Not bad when you consider all the "yucky stuff" that you are eliminating.  Feel good about yourself and your food and serve up another bowl.

Baba Ganoush



So what do I do when I am stressed and feel like life is not going my way??? Anyone paying attention out there??? I cook!! And in this case, I knit as well. (Uh Ohh! that is not a good sign.) This weekend has been a trying one but unfortunately my life has been this way for so long that I know that "busy is best." So I planned doctor's appointments, craft parades, event with friends and lots of activities for this weekend. I have been fairly successful.... NO! I am proud of myself and I will say I have done excellently, considering. (If you are lost, you have not been reading often.... shame! Lol!)



So this morning when my wonderful, sweet pups who love me dearly, woke me up at 7am  on my only day off, I needed something to do. (Do you sense the sarcasm here?) Thankfully, one of my employees and friends brought me 6 Japanese Eggplant and boy did I have plans for them. Here is the outcome and it is fabulous! Once you eat this you will never order Baba Ganoush at a restaurant again when you can make it so easy! I promise. It is smoky, garlicky goodness!

Traditional Southern Tomato Pie

So I have lived in South Carolina for 14 years and for 14 years, I have heard about the elusive Southern Tomato Pie. No... let me rephrase. As the locals say- Southern Tomato Piiiiii. Yes, I have lived here for 14 years and have yet to taste the tomato piiii. A few years ago, a local friend gave me this recipe and told me I had to try it cause it was amazing. And I am guilty again, it went into the vault of recipes that I just have to try..... someday.  I finally did this weekend. After two huge pieces, I literally had to walk away from the pie!!! This thing is like crack. It is so good! It might be a little on the fattening side( a little?!?!?!)  but who cares when you get to experience all the goodness of local homegrown herbs and veggies covered with a bubbling pimento cheese like topping. I did end up sharing a few pieces of my new addiction with a few very special friends. But don't worry,  last night, I had a totally healthy meal. I ate a huge piece of tomato piiii w a tiny side salad. LOL!!!!! I guess it is all how you look at things!!

Tart & Tangy Refrigerator Pickles


So what little summer we had is coming to an end! Kids are going back to school, the early mornings ,when my dogs and I are sitting on the porch drinking tea, have been cool and my garden is giving me its last offerings for summer. Some vegetables are more plentiful than others right now. Unfortunately, with this summers crazy weather, gardens have really suffered here in my part of South Carolina. My family in Pennsylvania has also reported bad crops. One thing that has done exceptionally well is my cucumbers. Maybe it was due to all the rain, I don't know. They had a difficult start though. I always plant my cucurbits from seed. I planted them all in late April as I always do but this year, we had record amounts of rain in the spring and they never came up. I had to reseed them all and therefore they got a late start. I do not know the garden phenomenon that made these cucumbers go crazy while my squash, cantaloupe and zucchini struggled to produce. I do know however that it is August 17 and I just picked 12 cucumbers today. I have the pleasure of doing this at least 3 times per week. Many friends and loved ones have benefited from my cucumbers this summer.


As the summer winds down, I want to share a few of my favorite recipes for using up all those last minute veggies. Yes, some of these recipes will be canning, some will be dinners to make to use up those not so beautiful tomatoes and others will just be personal favorites. Remember this is the time to stretch the summer and enjoy the tastes in the most simple and beautiful way. This late summer time is also a time to start to think about winter and the flavors we will miss. Prepare now..... and in January when you sit down to some fresh pasta covered in homemade pesto or a bagel smeared with  tomato basil jam you canned yourself, you will be standing in the middle of your summer garden again.

Mediterranean Tortellini Pasta Salad




Who does not like a picnic? Whether it be in a park or on your back porch, this is the perfect time of the year for al fresco dining. In the summer, I try to eat my dinner on my back porch every night. I just love it. Listening to the birds and taking my time with every bite; it has really become the best part of my day.

This recipe was made out of things that I had in my fridge and was supper simple. Feel free to substitute any alternative ingredients that you like. If you don't have capers, add fresh herbs. It was filling and fresh and I think quite pretty. I ate it for dinner on my back porch then took the rest to work the next day to share. Enjoy!

Roasted Ginger Balsamic Glazed Beets


I know not everyone is a fan of beets but once again I ask you to give them a try. I have a track record of converting several people into "beet lovers" and as you all know I am a self-proclaimed fan of beets. If you do not try them for the taste alone, give them a try as a natural, digestive aid. Beets are great liver and blood detoxifiers. This is one of the prime reasons that I have incorporated them into my diet in any way possible. I am a huge believer that all the nutrients and health that our body needs can be found in nature. I believe that the body has the ability to heal itself if you feed it with the best nutrients possible. Beets are one of those ingredients, especially if you have digestive issues. Why take in some foreign substance produced in a lab with 200 possible side effects when right in your grocery store you have the answer that all that ails you??

Since it has rained almost every weekend here in SC, last Sunday, while I was doing all my regular household chores (laundry, vacuuming, and cleaning the kitchen) I decided to throw some beets in the oven for a slow roast. Not sure what I would make with them when they were done, I knew that I could whip up something that I would enjoy all week long. After the beets were finished, I made this recipe up with a few ingredients I had around the kitchen. These were great. I ate them warm that first night but then ate them as a cold side dish for several nights after; even serving them to a friend.

Melon & Chicken Herb Pasta Salad

What is better summer eatin' than a pasta salad?  I woke up this morning to make a fab pasta salad for a friend and I to snack on while we were downtown at the Fidelity Moonlight Movie in Falls Park. I love this event. Every Wednesday night in May and September here in Greenville, SC they transform the park downtown into an outdoor movie theater. It is a BYOP (bring your own picnic) and BYOB event and it is tons of fun. A few friends introduced me to this event last year and this year my goal was to go as often as possible. Unfortunately, due to the gloomy, cold weather we have been having here in SC we never made it to the movie but we did eat some awesome salad!   I was so excited with the results that I had to share them with you. I plan to go next week though so if you are there, let me know and we can share some good eats.

When I got my issue of  Eating Well Magazine this week, I was so happy to see a whole section on healthy pasta salads. I grew up eating pasta salad at every summer cook out or picnic and while they were tasty, they were laden with pepperoni and tons of cheese. The concept in this magazine is: 1. Pick a Pasta, 2. Load Up with Veggies, 3. Add Lean Protein, 4. Boost Flavor and 5. Dress It. It is really so simple and can be as healthy as you want. In this recipe, I chose to use quinoa pasta which was a personal choice since I am trying to limit my wheat intake but you can choose any pasta that you might love. I chose fresh herbs that I have on my back porch and chicken that I had grilled the night before. This recipe really was so easy and quick. I look forward to using this concept to make many pasta salads this summer. Tune back in for my latest creations!

So, I know, where have I been again?? Well..... this time I have a legit excuse- actually multiple excuses! First, I had a death in my family and had to go home to PA for services and family responsibility (more to come about this in a future post.) Secondly, as some of you already know, I went into battle with a new mandolin and the mandolin won. Three Fridays ago I decided to cut some beet chips with my new mandolin that I got for my birthday. As I proceeded, I thought this is not so hard and that I needed to be careful as my Mom just sliced off the end of her finger in a mandolin accident just a few weeks before. As I thought this, I tilted my hand back to avoid cutting my fingers and in one swift motion, shaved off a huge piece of my palm.... yep down to the muscle. (Insert SCREAM here!!!!) So off to the ER I went. Sparing you the painful, bloody details, I have been in a huge bandage for weeks now. I have not been able to cook, type, see patients, write or even wash my hair, so blogging was completely painful and out of the question. My friends and family have stepped forward in a huge way to take care of my daily duties and hand wrapping, but certain things you just have to do yourself.

This is one of the first recipes that I have made since mauling myself and it felt so good to be back. I love to be in the kitchen.  Being able to make food again was a great relief. There is something to being able to sustain yourself that is empowering to me. I like making things with my hands, and as you all know, that is one of my big stress relievers- baking, knitting, gardening. Moving my hands quiets my mind. Needless to say, in a time right now when I could use stress relief the most, I have been without the ability to quiet my mind and make something beautiful or delicious. It has been depressing.

I hope that you make this recipe and enjoy it. It is something I threw together with ingredients I had at home. The sweet potatoes are amazing. Just a suggestion though- cut them by hand!

I have tons of these chickpea recipes stashed away in my recipe archives.  I think by now, I have so many, I could probably blog "Chickpeas 50 Ways." So, last weekend, I finally got bored enough to give it a try. Isn't it funny how some recipes you see and just have to make right now!!! I remember one night before I started this blog, I  ran out of work and straight to the grocery to get ingredients to make an amazing Blackberry Wine Chocolate Cake. It could not wait!!! Thank goodness our grocery stores here in South Carolina sell wine or my "sweet dreams" would have been shattered.  I would have had to wait 24 more hours and that was not possible. Ironically, my "OMG emergency recipe cravings" are always something involving chocolate and sugar. Ironic?  Probably not. Stress induced you say........ you must have been reading for a while.

On the other hand....chickpeas..... not such an emergency.

I am happy to report that this recipe was excellent. It was super simple and made a great tasty, treat that was healthy. When eaten right out of the oven, they taste a lot like a peanut.  After cooling a little, they have a crunchy texture that is a great substitute for many common snack foods such as chips or pretzels, but much healthier. Maybe through this little experiment, I have realized that those recipes that are stashed away are my attempt to save the best for last. Next chickpea adventure- Curried Chickpeas!

Butternut Squash Soup

So it is fall. Although this is not one of my favorite times of the year, I do love some of the foods that this time of year allows me to start making. It is time for casseroles, roasted veggies, pies, and everything  pumpkin but I am especially fond of different types of soup. I love taking  time over the weekend to make a different type of soup that I can eat all week. When I come home from a long day of work and I am tired I know that I have some great soup and a glass of wine that will warm my tummy and my spirits. Since I am not a TV watcher, I curl up on the couch, usually with my laptop, and eat and read blogs. LOL!

One thing that a lot of my girlfriends all say, is that they love soup or salad for dinner. It is something to snuggle up with at the end of the day that is light, healthy and does not come with a lot of guilt;  no meat and potatoes, if you know what I mean. What girl needs meat and potatoes??? Wink! Wink!

Grandma Ethel's Calico Baked Beans

This is one of my Grandma Ethel's recipes that I remember eating every year at our family reunion. It is an old recipe that I have had forever but never made. I have had multiple parties and cookouts but I guess I never made "the occasion" to make this recipe. When I was planning my Summer Porch Party to share my new house with my best friends, I was going through recipes and thought why not use an old recipe that is new to me since I had never made it.

It has been quite a few years since I have had these slow baked, legumes. The classic recipe is really simple and the smell that fills the house while the beans cook is amazing. There is a good amount of bacon and ground beef in this recipe which makes it superfilling. It is hearty enough to eat as an entree or pair it with some chicken or a burger for a great side dish.

These beans got rave reviews at my party which made me proud. Not only was I proud of the recipe itself but I was humbled once again to make a recipe that was my Grandma's; keeping her spirit with me in the kitchen and through the celebrations of my life.

Beets and Sweets

Beets and Sweets- Right out of the oven

Since my life has been hectic and most of my bakeware is in boxes till my move next weekend, I wanted to post something thing that is super simple and that I have found to be incredibly delicious. I made these last night for dinner and quite truthfully try to eat them at least 2-3 times per week for thier wholistic effect.

Of course there is a story behind this recipe. About 2 months ago, I did a 21 day Standard Process cleanse, one of the suggestions for increased cleansing and improved gallbladder funciton is to eat 1/2 a beet per day. I had a definate problem with this at first, because I hated beets. I always thought they had a "dirt" taste. Through some experimentation and some researching, I found some recipes that I really enjoy. And when they are baked they lose that dirt taste and really become quite sweet. This is the most simple and tasty recipe of all the ones I tried.

Overall, the cleanse was a great expereince in my life that really allowed me to see what I was eating and in what quantity. Although I do have the occasional piece of cake or cookie it is not my everyday vice, I am a very healthy eater. The cleanse further enforced that and really make me realize how clean eating can better your mood, energy level and overall health.  It allowed me to slow down concentrate on me and my health and really heal from within. The first few days were exceptionally hard due to extra food prep and organization to get lunches planned before work. Also the first 3 days are really when your body detoxes from sugar, preservatives and toxins. This process leaves you a a little fatigued. But it only lasts 3 days. I came out of the cleanse 7 lbs lighter and feeling like I had a spring in my step.  I can not wait till fall when I repeat the process....
