White Chocolate, Cranberry, Pecan Bites


I just wanted to share this quick little recipe. I have been getting some questions from followers about what they can take to their Christmas party. This is a great recipe because it is super simple and you only need to know how to use a microwave.  I don't know anyone who can not "nuke" something. Give it a try! Your friends and family will be impressed. I guarantee!


White Chocolate, Cranberry, Pecan Bites



Enjoying a little bit of sweetness while looking at my beautiful tree.


3/4 cup white chocolate chips or almond bark
1/2 cup dried cranberries or cherries
2 Tbsp shredded, sweetened coconut
1/3 cup chopped pecans

Place the chocolate in a glass bowl. Melt the chocolate in the microwave. Begin with 1 min and then increase the time if needed. Stir until smooth. Add all the other ingredients and stir to combine.


Drop 1 Tbsp scoops onto parchment paper or wax paper. Let them cool a little and then using your hands shape into a ball. Place on wax paper again and put into the fridge to harden. Store the bites in  the refrigerator in a sealed plastic container. Before serving the bites, take them out of the refrigerator for about 15 minutes to soften. Enjoy!
