Peachy Keen Muffins



Who doesn't love a warm muffin for breakfast? I know that I do. These muffins are so good and really easy! OK. They are not as easy as the dump and mix variety from a box, but for homemade muffins they are pretty easy. At times, we get used to the really sweet artificial fruit tastes. These muffins are not super sweet but have a great, subtle peach flavor. They are the perfect morning muffin with a cup of coffee or hot tea. I made these and took them to work this past week and they were gone fast. Give them a try. I am sure your friends or family will fall in love.

Peachy Keen Muffins


I like to add a few whole slices of peach in the middle of the muffin to make sure you get that big "Peachy Bite."



1/2 cup butter at room temperature
2 large eggs
2 tsp. baking powder
2 1/2 cups peaches (mash 1/2 cup with a fork)
1 cup granulated sugar
1 tsp. vanilla extract
1/4 tsp. salt
1 tsp. cinnamon
2 cups all purpose flour
1/2 cup milk

Preheat oven to 375 degrees. Put liners in 12 muffin cups. In a medium size bowl, beat butter until creamy. Beat in sugar until pale and fluffy. Beat in eggs, one at a time. Beat in vanilla, baking powder and salt. Mix mashed peaches into batter. Fold half the flour into mixture, then half the milk. Add remaining flour and milk. Fold in the remaining peaches. If you want that pop of peach right in the middle, place a scoop of batter in the muffin cup. Then place 2 slices of fresh peach in top of batter. Place another scoop of batter on top of peach slices. Make sure to cover the peaches but only fill cups 2/3 full.  Bake for 25-30 minutes or until golden brown. Let muffins cool in pan for at least 30 minutes before removing from pan.
