Oatmeal Chocolate Chip Fudge Bars



Oh, it is the week that every student and instructor dreads- it is Final's Week! Here I sit watching students stress about the testing that determines if they are successful in this class. While they contemplate the filtration of the kidney and the action of muscle contraction, I sit here and blog about fudge bars and sweets. For me, it is all fun and games until they turn in those tests, and then the burden is on me. The grading! Oh, the grading.... and the emailing to students who are begging for extra credit. And the emails that rarely appear that say thank you for all your help and effort. It kind of feels like I am in suspense of this great culmination of work but I have to wait and watch and sit. And then there will be a big rush to the finish!

For now, I am just going to sit back and dream about fudge bars and chocolate cupcakes and gingersnap ice cream and enjoy the calm before the grading storm.

Ossi De Morte (Dead Bones)




Happy Christmas Eve!

I know it has been a while since I have posted, but it has been an interesting few months!! This fall, I have been working at three local colleges which has kept me running in every direction and in July, I had a bit of a surprise visit by some cells that, well, just weren't quite right... (we don't like to use the real word!) It took months, but as we know, bouncing back is what I do!

And now it is Christmas! My little dog and I have made it home to PA and there is so much to be thankful for. I am with the people that I love and in a place that I will always call home. To see my parent's Christmas tree and be with the people who are most dear to my heart is what Christmas is all about for me! I am so happy to be here and I am happy to share this recipe with you. I guess you can say it is my little Christmas gift to you! Thank you for reading and supporting me!



So let's get down to the story of this recipe! This is the perfect time to share the story of my Gram H. who the "Biscotti" portion of this blog is inspired by. The recipe that you see here has been part of the Italian side of my family for a very long time. My great-grandmother used to make this recipe when my Gram and her 5 siblings were young. Like most families in my area, many of my great-grandparents were immigrants who came through Ellis Island. They came from their countries for a chance at a better life and for work opportunities. Upon settling in Western PA, both sides of my family earned their living and supported their families by working in the coal mines. This is what almost every man in my area did for generations.

So, this is the recipe that my great-grandmother used to bake. It has a cute little story that has been repeated many times in my family; especially when my Gram and her siblings get together. After my great-grandmother used to make these little half cookie/ half candy gems, she would store them in a tin in the pantry.  In the winter (before the times of global warming,) my Gram and her siblings would bundle up in their warm clothes and head outside into the snow. On the way outside, they used to sneak into the pantry,  open the tin of cookies and take "just a few" to fill up their pockets; thinking that their Mother didn't notice. The brothers and sisters would head out to the big sled riding hill where all of the neighborhood kids congregated. Unfortunately, they did not have a family sled to join in on the snowy fun. But what they did have was pockets full of Ossi de Morte which they used as cash to buy rides on the other children's sleds. Only two of these small wonders would get them a ride down the hill and a place in the lore of the town. While they didn't have the money to buy a sled, they had the ingenuity and the camaraderie that brothers and sisters have when there was something that was really important to them. There is nothing like the bond of family! Still to this day, in tough times, my Gram reminds me that I am descendant of this strong family and that I can solve any problem or overcome any diversity.

Despite the hard circumstances they ran into growing up, the happy times always float up! You can see it in my Gram's face when she tells the stories of her family. And rarely does she tell a story that is about bad times! It is the good we remember as family and those moments are the ones that hold us together this special time of year.  So, this Christmas. fill up your pockets with these cookies or something else that is special to your heart and hand them out; not as a type of currency but as a way to say "I love you" to family and friends.

Sweet Potato and Quinoa Chili


So, as my Mama used to say, it is time to "get back in the swing of things."  Summer is coming to an end! My wonderful vacation in Charleston was just what I needed to transition to this busy time and my time away was fabulous. In Charleston, you can always count on great food, a beautiful beach and amazing weather. But this time, it also included meeting awesome, new people.

Like most of the rest of you, my life is about to become busier, but that is not bad. I am a girl that kinda loves a good routine. For years, I saw patients on a set schedule and taught school at given times. I kinda prosper in that schedule and if nothing else, it makes fun times more appreciated and anticipated.

For me, with that more regular schedule comes more organization and preparedness. Most nights, that includes a lunchbox ready the night before. This recipe is one of my go-to lunch staples!! It is so healthy and full of veggies and protein and it freezes so well!! I also have to note that you will not miss the meat in this chili! It is hearty and delicious! If you are a bit more of a healthy, traditional chili eater (what???) give my Turkey Pumpkin Chili a try. I will admit, I have slipped that one by several chili afficiandos and they had no idea it was good for them! What they don't know.... I won't name names!!

I have to admit, I have been making this recipe for about 3 years and have not shared!  Shhh... Shame on me!!!!  (And some of my vegetarian meals are my most popular!)

Sweet Potato and Quinoa Chili

As usual, I made this recipe in a large quantity and plan on eating some in the next few days, but also will freeze smaller quantities for lunches. This will serve multiple purposes: I have an awesome homemade lunch and I have a built in ice pack! Heat, eat, (check teeth for spinach) and back to work!!!



1 tablespoon olive oil
1 onion, diced
1 hot pepper, diced or one can of chopped chilis
1 green bell pepper, diced
1 yellow or red bell pepper, diced
5 – 6 garlic cloves, pressed
2.5 tablespoons chili powder
2 tablespoon cumin
1 teaspoon dried oregano or a handful of fresh oregano
salt and pepper, to taste
1 can (6 oz) tomato paste
1 can (15 oz)  diced tomatoes or 1 1/2 cup diced fresh tomatoes
4 cups (32 oz) vegetable broth, more as needed
1 can (15 oz) black beans, drained
1 can (15 oz) kidney beans, drained 
1 can (15 oz) garbanzo beans, drained
1 and a half large sweet potato, peeled and diced 
1 cup dry quinoa
A bag of fresh spinach or large bunch of kale, washed and chopped

In large pot, heat oil over medium heat. Add onions all peppers, cook until soft (about 7 – 10 minutes). Add garlic, cook for another minute or so. Add the tomato paste, chili powder, cumin, oregano, cook for 2 more minutes stirring constantly. Add tomatoes, broth, beans and sweet potato, stir until combined. Add quinoa, bring to a boil, reduce heat, cover slightly ajar and cook for 30 -35 minutes, stirring often as this may stick. At this time, add spinach or kale and cook until wilted. No more than 5 minutes. Chili is ready when sweet potatoes are tender and greens are soft. Add additional water if chili is too thick for your liking. This chili is great right after it is finished or you can use in later in multiple ways. As I stated, I like to freeze individual portions for lunches. I have also used it as a side dish with fish or chicken.

Freezing Tomatoes




I LOVE THIS RECIPE!!!

This is the most simple way to save tomatoes that I know of. When I am feeling really lazy (which is often!) I just freeze a bunch of tomatoes rather than messing with canning them. For whatever reason, most people look at me like I am crazy when I say that I do this, but it really works. This is a trick that I learned from my Mom and  it come in handy when the winter gets cold and you want to make a chili or soup. Just get out the frozen summer tomatoes and run them under really hot water. The skin peels right off in your hand. Then into the pot they go. They are way better then anything that you can get out of a can and remember- You grew them! So go ahead and feel accomplished! Sometimes, the little things make the day a little brighter!

(I admit these were hard to take pictures of! Usually I take all my pictures outside and when I took these frozen guys out in our 90 something degree heat they instantly got a little frosty. They don't look like this in the freezer, but I guess it does get the frozen point across.)

Slow Roasted Tomatoes and Herbs for Freezer Sauce



Tomato salvation #2. This is one of my all time favorite ways to save or "put up" (as they say down south) tomatoes. And this one involves those prolific cherry or grape tomatoes that seem to pop up overnight. I have literally been picking 2-3 quarts of these per day but maybe that is my fault. See... I have this theory that if I make my garden just "a tad bit bigger" every year..... I have to mow less grass!! Yes, I know. What reasoning! But I think in the past 3 years, at this one house, I have cut out mowing maybe 3 extra feet on the one end of the garden. Wow!  Every inch counts for me when it comes to mowing grass. I hate mowing! In case you didn't notice, it just comes back..... And in the South Carolina heat, that just means another day dripping sweat at 7 am before the real scorching temps set in. So instead of mowing that extra little space, I prefer to can, freeze and preserve these little jewels. They are worth the sweat to plant, nurture and pick because I get to enjoy them all year!!

My backyard better watch out .... in 10 more years I won't have to mow grass.

Sauerkraut and Potato Cheddar Pierogi




Today is January 25th and it is a day to be celebrated!!  I got to call my Dad for his birthday!! In August, that was something that I feared would never happen again.

This is the reason that you have not heard from me in a while. As you know, I started this blog in a time that I was going through some hard issues. I have blogged through the separation of my marriage, my divorce and all the heartache that comes with separating that life. I have blogged through finding new love and all the greatness and adoration that goes with that. You have seen me in my highs, my lows and my appreciation of multiple people in my life. I have held little back!! That was the reason for starting this blog. From the very beginning, I have said that cooking is my therapy and MY LOVE begins in the kitchen. This blog has been an outlet for me to speak in times when I needed to get thoughts out and until this time, I have not had any problems with that.

 I have learned to realize that a lot of people don't deal with feeling and emotions well and can not express to others what they want and need. I see this daily with my patients who hold things in until their problems express themselves physically and this lack of feelings has been a problem in the relationships of my past. I have worked diligently to be able to say what I feel when it is pertinent, but, nothing has stopped me in my emotional tracks like this August.


This August my family experienced an event that shook who we were. With out much detail, my Dad became incredibly sick very suddenly and was hospitalized for a significant time. The details are not important and quite honestly too much for me to talk about. But since that time, I have not been the same person. None of us have! In just a few days in August, everything changed for me. Since August, we, as a family have been collectively holding our breath... waiting, hoping, praying and whatever else it took! I have learned there is one thing that happens when you hold your breath. You lose passion and desire to do anything... but wait and hope. That is where I have been. Kind of suspended in time... waiting! I am afraid when my phone rings. I am worried when it doesn't. A lot has happened since August. And most of it I have had little influence on nor have I had the power to create (which I hate to say.) Time has passed, for me relationships have been lost and we are still taking it day by day. I am in no way saying that this struggle has been mine alone. My Dad has had the biggest fight and once again in his life has come out strong, but we have all taken some burden in this ordeal.

In some ways, this past month has been healing for me. I feel like I have rejoined a part of my life. Since I live a far distance away, I was able to take a breath in this situation when I got to spend an extended Christmas holiday at home. It was so empowering to see the progress firsthand. It was good to talk and appreciate and love the people most important in life- family.  It was good to just be present in someone else's life who has done so much for me. There are things that will never be the same and I am careful to not say some things will be better, because we don't really know yet. But there are some things in life that will just be and how you deal with them will determine your character. If there is nothing else I have learned from him; that is it. We can't control everything, we can't change fate but we can deal with in the most powerful way we know.

Today on my Dad's birthday, I celebrate him and everything he has taught me. I appreciate all the times he stood by me and hope in some way, I have supported him in this past few months. And lastly, I hope he knows I am proud of him. He has come back to us in a way we never would have imagined and has shown us again what strength is.

Cinnamon Toffee Ice Cream on Grilled South Carolina Peaches




It is officially SUMMER!! And what is better this time of year than ice cream and fresh grown local peaches??

These past few weeks, here in South Carolina, we have been "treated" to true summer weather in the south. Everyday, it has been well over 90 degrees. Ugggg.... There is nothing more horrible than getting into your car at the end of the day and your car saying that it is 105 degrees. Some days, you can barely touch the steering wheel.  At first, when I moved south in 1999 (from the frozen tundra of Pennsylvania), I thought that the heat was going to be the death of me.  I remember several times gasping as I walked outside and telling friends that I could not breath. I was feeling as though the humidity was going to suffocate me. Since then, I have learned to look at the hot summer months more as a compromise for the temperate fall, winter and spring. Thinking now.... If given the option of shoveling 3 feet of snow in freezing cold conditions or sweating a little downtown while watching a band and having a cold beer on a Friday night- I choose that cold beer!



One of the jewels of this area is the great produce that we have in abundance. Whether you are a local Carolinian or a transplant like me, the one season that everyone looks forward to here is peach season. We follow the peaches from the first buds on the trees in very early spring, through every frost that might damage the crops, until the time we bring home our first basket of pure South Carolina goodness.  Most people here await that first peach of the season because it is one of the true signs of summer. Lucky for us, this years peach crop has turned out to be prolific and we are loving every single bite!!

Ham Barley Soup


Who is C-O-L-D?? I am, but as a lot of you already know, I am always cold. I have the perfect solution to beat the cold and this crappy weather- my Gram H's Ham Barley Soup. This is a recipe that I have loved since I was a little girl. My Gram H. knew that my little sister and I loved this soup (as well as her fabulous spaghetti.) When we would go to my grandparent's house in the winter for a weekend sleep over, she would make this for us.  It was the best possible food to eat after spending the day outside playing in the snowy Pennsylvania weather. I can still see her standing by the stove stirring the pot of soup in between hands of our favorite card game, Kings on the Corner.

When I got older and moved so far away, I craved this soup. One day, probably 10 years ago now, I really wanted this soup. Since Gram lives so far away, the only way that I was going to get my soup is if I made it myself.  I picked up the phone and called her. She walked me through the simple recipe and I made a great pot of soup. Of course, it is always best when Gram makes her recipes,  but I thought I did a pretty good job. Now, every time I make this soup, I call Gram and tell her that I am stirring a pot of her Ham Barley Soup.  It makes her happy to know that I love her soup and that I am keeping her recipe alive. It is also a great time to fill her in on my latest doings and to just have a few good laughs. Even after all these years, this soup continues to bring us together.

Italian Sausage, Portabello Mushroom Lasagna


I love lasagna in any form and with almost any ingredients and this one did not let me down. As a kid, my mom would always let us choose a dish that she would make us for our birthday. I remember on several occasions choosing her lasagna. She made a traditional lasagna, not far from this recipe, that I loved!! I remember eating it with my family that birthday night (with an awesome cake, of course) and then eating leftovers for days. Thinking back, it was probably one of those years when we were snowed in. As most of my family reminds me every year, I was born in what Western Pennsylvanians call the "Blizzard of '77.'' (Oh #*%@, I just told you my age.) They tell me the snow was up to the power lines. And yes, there are pictures and news paper articles to prove this. Somehow, unfortunately, this weather event has stalked every birthday celebration I have ever had!! Most of my parties were either cancelled or shortened in some way because of treacherous roads and accumulating snow. Even as an adult, and even since I have moved away from the frozen tundra of Pennsylvania, many birthdays have been hindered by storms; including this year.  In the past few years, when my family jokes about Rebecca's snow storm, I have begun to tell them that they must "Celebrate the Birth of the Ice Queen!" I may as well embrace it!!

I have decided that next year "The Ice Queen" will forgo her January birthday and celebrate outside in the July heat alongside a large pool, with a BBQ, fresh peach ice cream and lots of icy cold beer!! Who's down for a party??


Even though many years have passed,what better recipe than this to make when I am snowed in? . Unfortunately, due to the weather and my little house which has very little natural light, the pictures of this dish are not up to the usual standard.  I thought I would share it though because I really did like the recipe. I thought of making it again just to photograph, but seriously, a single girl can not eat 2 pans of lasagna and still zip her jeans. So... out of respect for my curvy, girly figure, you get pictures of the original attempt. Maybe this is one of those meals where you sit back, close your eyes and Enjoy!!

Espresso Cheesecake with Dark Chocolate Ganache



OK, I have started this blog at least 15 times and then erased it each time. Usually, I am not so challenged with WORDS! On this post, I can not seem to figure out how to express what I want to say. After much thought and time, (this cheesecake was made for a birthday on Dec 19th) I realized it was not the words that had me stumped, it was the meaning of those words and my concern about sharing too many of my feelings. So.....

You have probably heard the saying "We don't meet people by accident. They are meant to cross our paths for a reason." In September, a really phenomenal person crossed my path in the most unusual way, and he has turned out to be one of the best things that has happened to me! It is true that when you are least expecting it, someone truly amazing can come into your life and makes a huge impact. My guy has done that!

I do not want to say much more than that now. I know... I know!!!! I have shared so much on this blog already. What is the big deal??? I guess, I am just enjoying every minute of NOW! and I want to hold onto it all for a little while longer. This is all very new, and I am so hopeful that in the future, I will have so much to share with you! Just know that right now, this girl is soooo happy and can't wait to see what is to come!

Apple Pecan Autumn Cheesecake



It is getting to be that time of the year when most of the people in my circle have their B-days! What does that mean for me?? Baking! From now till January it seems that someone is celebrating every week. If there is one thing that I love, it is making birthday cakes, pies, cookies, cheesecake... you name it. I know that I have talked about this before but I will say it again. My Mom was the "birthday cake queen" in our little community (see Reese's Peanut Butter Cup Cheesecake.) She made every birthday during my childhood memorable with one of her fabulous custom cakes. In our house, a cake from the grocery store was unheard of. While shopping at the local market, we would walk past those cakes encrusted in mountains of jumbo, blue-tinged roses and cringe. What poor person is going to celebrate another year of life with Happy Birthday written in an illegible smear? My Mom was determined that we never would!!



She has passed that ideal on to both my sister and I. No store bought birthdays here!! Even my little sister who would hide every time that baking was even mentioned, has morphed into a Birthday Cake artist; every year making amazing cakes for her son. She stresses out about the task for about 2 months beforehand, but she pulls them out and they are beautiful! When asked why she does it, she says that she wants her son to remember his Mom, taking the time to do something really special like our Mom did.  And he does!  He is amazingly proud every year of what his Mom has made.

Pumpkin Cream Cheese Roll




OK... So this is kind of what I am known for!!! (Well, one of the things.) Not bragging, but every year about this time, friends, family and even people who work at companies nearby, start to inquire about my pumpkin roll. I usually end up making 20 or so and giving them away as gifts for Thanksgiving dinner and to say thank you for friendships. For those of you that are my PA followers... Yes, this is the same roll  that my Mom makes every year. She has passed on her baking genes and she has also passed on this recipe.  The actual recipe is not a secret. It is a very popular recipe this time of the year that you can find in women's magazines or even the inside label of canned pumpkin. This recipe has become special to me because it has become a fall family tradition and I am told, it has become of my specialties. Recently, when I had my best friend who NEVER bakes over for dinner, she told me that she made a list of  items that I cook or bake that she considers "Rebecca's  Specialties." This recipe was on the top of that list. Also on the list were my Pecan Tassies, Stuffed Cabbage, Gobs and my Grandma's Calico Beans.  I thought her admission was funny yet really flattering.

Specialties I am not sure about, but I do know that it is not fall without pumpkin roll in my house. This year I have a lot of be thankful for and a lot of great people to thank. Who knows maybe this year, you will be on the receiving end of one of these great fall treats!!!

Banana Pudding Cheesecake



This recipe is somewhat symbolic of my life right now. Let's just say that it is BANANAS!! Yes, and not in a good way. This week marks the end of my marriage of 10 years (relationship of 14 years.) It has been a horrible past 3 years and it is coming to an end. I have so many mixed emotions right now and unfortunately everyone else has an idea of how I should feel or act. Some have even suggested that I have a party. Obviously, they have not gone through this process. I am a person who does not give up and the downward spiral of the past few years has made me feel very let down in myself and all things that I believed were good and trustworthy. In my heart, I know that I have tried all that I could possibly have, I loved, I listened, I cared, and I tried so hard, even at times I knew I could never break through. So many of my friends and family have watched my struggle; that is the best word for it, a struggle. I kept hoping and trying that everything could be worked out and it couldn't.  I never considered divorce to be a choice for my life,  but as I have learned all of what I did was not enough to overcome life's obstacles or how people change over the years.  Through all the trying and pain, not only have I lost someone that was the most important person in my life at one time; I have lost myself. And that is a sad place to be. I gave and gave and gave and I lost myself.

This week I have allowed myself to finally mourn this process and yes there have been tears. In so many ways, this is a death of a huge part of my life.  Now I have to move on and find out who the new Rebecca is and unfortunately that will be very difficult. I have so many choices to make right now; personally, professionally and all of them can affect me for years to come. I am moving forward slowly, cautiously and most importantly making every decision for me, something I need to learn how to do again. Please keep me in your prayer and send love in my direction.

Frozen Peach Pie Filling


 A lot of times, when I am talking to friends, patients or family members about some of my cooking practices, they look at me with surprise and say that they never thought of doing that. This happens a lot when I talk about canning, preserving or freezing. Unfortunately, we are more comfortable going to the local big box grocer and buying frozen fruit or veggies in a can. This time of year, when gardens are offering up their highest yield and farmers markets are bursting with seasonal fruits and veggies in every color, is the time to think about what you will miss in winter and plan ahead. Plenty of our local produce can be canned, frozen or dried for later use. Also when you grow or buy some fruits and veggies you always get a few that are just not pretty. These are great ones to save for recipes like this.





In this recipe, I went to our local produce stand that I frequent weekly. They had a special on a half bushel of peaches for $8 because they were considered too small. I bought it and have eaten them, baked with them and gave some to friends. In the bottom of the basket there are always a few that are bruised or slightly crushed. These are always the perfect peaches to make into pie filling. Of course, fresh peach pie is always a treat during summer months, but imagine in the cold gloomy days of January (when we all need a mood booster) having the ability to bake a fresh peach pie. It is comfort at it's best. First, you have the satisfaction of knowing you made this and it gives you the taste of something that you can look forward to. Prepare now. In January you taste buds and maybe your friends will be thanking you!

Mini Peanut Butter Cup Ice Cream Cakes





So even food bloggers make mistakes..... and this recipe turned out to be one of mine. Every year when we go to the beach, I make my sister something for her birthday dessert. I typically make cupcakes and freeze them, then ice and decorate them when I get there. This year, I spoke to my 6 year old nephew on the phone and he told me he wanted ice cream cakes for his Mom's birthday. He had seen my Whoppers Malted Milk Ball Ice Cream Cake and he was having ice cream dreams. So "Aunt Becky" quickly agreed. How hard could it be?  I already took a huge cooler full of all the dinners for the week. I would make them 2 days before, freeze them and take them in the  cooler. So I set about my task.


OK..... I think you see where this story is going..... After my 8 hour drive to OBX (in typical July heat), I opened the cooler to find totally frozen steaks, chicken and even sweet potato French fries, and there was my perfect plastic container of ice cream slime?!?!?!?!!!! How could this happen? Everything else is frozen... Blah!  As I am dumping peanut butter milk down the drain and picking cupcake papers out before they go into the disposal, my Dad comes into the room and suggests refreezing them. We were way past that point.  "Aunt Becky" had let everyone down. I was not a happy girl, but I was at the beach and no one's feeling seemed too hurt. So, the next day we made strawberry shortcake and celebrated just the same.

Frosty Cups Treats for your Favorite Pup


Happy First Day of Summer to everyone! I hope that you made it a great day. It is a beautiful night here in SC and Charlie and I are doing a little back porch sittin'. We worked all week and are just taking some down time to recharge and relax. I have a large glass of iced tea (unsweet of course) and he just had his Frosty Cup for dessert, made especially for him by his Mom. Yes that is me!! I am one of those weird people that is a "dog mom" but I wouldn't have it any other way.  He is my baby and he gets to celebrate the first day of summer as well. As a matter of fact, at age 13, he gets to celebrate anything and everything he wants. 

To get him to wait for this pic was difficult. As my Dad says, he is the most food driven dog anyone has ever seen. This trait has given us some pretty funny times.

So the story of Charlie... I could tell it for days. But for those of you that are not in the know. Charlie was a rescue.  Here in Greenville, SC we have an amazing rescue group called Foothills Golden Retriever Rescue and in 2002, after a lengthy application process, I was the fortunate one chosen to be Charlie's Mom. At that time, they were calling him Spencer, but fortunately for us, no had told him that was his name. He quickly became Charlie, after Charleston, SC. And due to his huge, laid back, silly personality, that name has fit perfectly. Charlie's past is pretty unknown. The only thing we know is that this huge guy with perfect manners and a huge personality was between 2-3 and was left in an apartment in Charlotte, NC. Then he became mine. And the rest is history....

From August 18th, 2002 until now Charlie has been my best friend. He has been included in all aspects of my life.  He goes to work at the office every day where he is the local celebrity and people come just to see him. He has gone on every vacation and stayed in numerous hotels across the east coast. He is welcome in all of my family's houses. He has been to the beach and to the lake. He has been through everything and been everywhere with me. It doesn't matter where we are, he is my ever present support and has the most devoted love. This past 2 years he has helped to carry my burden... And I don't know where I would be without him.

And now I am helping him carry his. Charlie is 13 years old, as far as we know, and for a big dog that is a lot of years. He is definitely slowing down and it breaks my heart. The time is coming when he will be walking over the Rainbow Bridge. When that time comes, he will be celebrated by so many people, myself included. He has given and taught me so much and right now we are embracing his later years. We are eating ice cream on a warm summer night on the back porch. We are eating fresh warm tomatoes from the garden (my dad taught him how to pick his own.) We are watching fireflies land on his paws. We are listening to what his body needs and not asking too much. And we are sharing lots of hugs. We are celebrating every moment....

Chocolate Chip Cherry Blondies

 

 

Hi Ho Cherry O! These blondies are delish! As we have already established, cherries are my favorite fruit and always make me think of my Grandma Clarke.  When I saw this recipe and the combo of cherries and chocolate, I knew this recipe was for me. And the best thing about it: "It is EASY." I had all the basic ingredients in my cabinet, had just been to the store and was the victim of good product placement; there were huge bags of Bing cherries displayed as soon as I walked in the door. Sucker!! So, one night after work I made these and I have to admit, I ate 3. I know, I know... I have to go to the beach in 1 week... But don't worry, I quickly  had 2 ideas! I wrapped the rest of this batch up and hid them (from myself) to take to work the next day. They were raved over and did not make it past lunch time. And then, the next night I made a fresh batch to freeze for the beach. Evil?? How?? Muhahaha!!!

Spicy Taco Soup



I love soup!! As you can probably tell. I always have but now I have more of an opportunity to eat it whenever I want. I love the versatility of soup with a salad, a sandwich or alone. It is simple and one pot can feed one person for a very long time. One of my favorite thing about soup is the fact that most of them I can freeze into single serving containers and pull out as needed. With my busy work schedule of teaching and seeing patients, some days I want to come home and have no prep or cooking time. I want to plop down on my couch with a bowl of soup in my lap and watch nonsense TV. Yes, here is my confession: I will watch Real Housewives of Anywhere. Watching these tucked, coiffed and bedazzled "reality" (loosely stated) stars have cat fights and party till their wigs fall off , makes me feel grounded and amazingly intelligent. And best of all after a day of decision making and being responsible, these shows do not require me to think. These modern day "soap operas" are one of my secret obsessions, but a girl has to draw the line somewhere right??  Never, never will the Kardashians be seen on my screen. Sorry, just saying: even tacky can be taken too far!!

Mini Frozen Citrus Pies



Summer is fast approaching! And for me it can not come fast enough! One thing I love about summer is the fact that my back porch becomes my second living room. Most nights you can find me outside reading with my golden retriever Charlie at my feet, blogging on Bonbons and Biscotti or laughing with friends while sipping some red wine. Everyone knows when they come to my house that if you knock on the front door and no one answers, walk around to the backyard and you will find me- on my porch. Every year, I decorate my porch with pots of fresh herbs and flowers and last year my Mom and I went shopping for some great new bright cushions and accessories that make this area the cheeriest place in my house. It really is THE place to be from April till October.



So why am I sharing this recipe? This recipe is the perfect little individual dessert to have in the freezer whenever those surprise guests show up for some porch sittin'. Make these mini cream pies ahead of time in whatever citrus flavor that you like and keep them on the ready. These are refreshing and tart.  They are perfect for an after dinner treat, a talk with a friend or a decadent snack when you have had a bad day. Go ahead eat two! You deserve it!

Whoppers Malted Milk Ball Ice Cream Cake

 

Happy Birthday to Bonbons and Biscotti....

And what better why to celebrate a birthday than with CAKE!!! Not just any cake but ice cream cake- just in time for spring!! There is nothing better than sitting on the back porch in the sun eating ice cream cake- YUM!

OK, there is a reason that I chose this recipe; actually a few. First I love malted milk balls and we have already established my love for dessert, but the need to make this recipe is more about having something that I never got to have for my personal birthdays. Yes, as I mentioned in my previous post, I always had a great birthday with a awesome cake made by my Mom, Toni "the master baker." However,  every year when my little sister's birthday rolled around in sunny June she had a cook out and a Dairy Queen Ice Cream Cake!  I wanted an ice cream cake sooooo bad but as in most small towns in rural Pennsylvania, the Dairy Queen was only open in the summer months. This made a lot of sense for my region. Really, who wants to sit outside on a picnic table and eat ice cream in 2 feet of snow? Since I was born on a blustery day in late January, an ice cream cake (or a cookout!!!) was never a possibility for me.  My birthdays were always rushed events that people came to, ate and left before the roads got to snowy to travel.  In their own way, my birthdays were festive and memorable but to this day... still no ice cream cake. Well, by making this cake I have solved that dilemma. Now I can have decadent chocolate cake on my birthday in January and mile high ice cream cake for my blog's birthday.  I am a happy girl!



I want to personally say thank you to all of you that followed my blog and watched me grow in this past year. As I have noted, I have had some hard days these past 2 years and every time I get a note of encouragement or hear that someone else has read my blog or tried one of my recipes, it warms my heart. I hope that I have inspired some of you as well. Remember Love Begins In The Kitchen... show someone that you love them.
