Oatmeal Chocolate Chip Fudge Bars



Oh, it is the week that every student and instructor dreads- it is Final's Week! Here I sit watching students stress about the testing that determines if they are successful in this class. While they contemplate the filtration of the kidney and the action of muscle contraction, I sit here and blog about fudge bars and sweets. For me, it is all fun and games until they turn in those tests, and then the burden is on me. The grading! Oh, the grading.... and the emailing to students who are begging for extra credit. And the emails that rarely appear that say thank you for all your help and effort. It kind of feels like I am in suspense of this great culmination of work but I have to wait and watch and sit. And then there will be a big rush to the finish!

For now, I am just going to sit back and dream about fudge bars and chocolate cupcakes and gingersnap ice cream and enjoy the calm before the grading storm.

Old Fashioned No-Bake Cookies

I am iced in my house.  NO, I am iced in my house in SOUTH CAROLINA!  Ughh!



 Did I go to the store before this event? Sure I did! I have plenty of wine, cheese, crackers and smoked meats. I know- no bread? No milk? What am I going to do with that? Well, it seems that I forgot something! Or at least have a sudden craving for something because I have no access to it. (Isn't that how it always works?) Maybe I am just bored, or maybe I am reading too many food blogs, but..... I NEED CHOCOLATE! And I don't have any. Well, I don't have anything other than a jar of Nutella, chocolate chips and cocoa powder. What can I make, what can I make???? No- Bake Cookies!!! How simple and quick! When you gotta get your chocolate fix there is not time for baking cakes and whipping up a perfect ganche. Nope!



With a HOT cup of espresso... hmmmm.... I think this is the best part of my day.

I also hope tomorrow I am FREE!!! It is hard for this Pennsylvania girl to be stuck in her house because of weather! But if I am still iced in... wonder what I will whip up in my kitchen tomorrow. Stay tuned!!

Tiramisu Cheesecakes



So, this year I don't have a Valentine in the traditional sense of partner in life and love... and that is OK. It is not that I am opposed to that sentiment in any way. I think that good things will come in time. This year, I am in love with me! I am giving me what I need, nurturing myself! I feel like the past few years have been a culmination of hard times and emotional changes. I have gone through times of insecurity and times of true joy. It has been a roller coaster! But at the end of this month, I am making a change that should allow so much of that uncertainty and insecurity to go away. I am making a leap! It is long overdue and I am a little scared... but I am so ready to let go and move forward in whatever life has waiting for me.

Of course this Valentine's Day, I hold in my heart everyone who has been true to me and stands by me. I love you all and hope that I show you everyday. I guess this Valentine's Day for me is more like a homecoming, coming back to me; coming full circle. Shedding the past and really just letting me shine. It feels GOOD!

Black Bottomed Nutella Mini Cheesecakes


Happy Valentine's Day everyone! I hope that you all had a Valentine's Day weekend as awesome as I did!!  I know that this recipe is late, but I have yet to master releasing a post when the recipe to be posted is a gift or surprise. Of course, I made these little cheesecakes for my guy! (Remember the slogan here at Bonbons and Biscotti: Love Begins in the Kitchen!!) The reason for the delay is I was just finishing up the post as he was about to leave his house and I was afraid he might see it before he got here. So... I had to make a choice and because of him, you get this recipe late. Sorry... a girl has to have priorities!!




But don't worry, I love y'all too! So... this weekend, we ate one of these delicious, Nutella cheesecakes for each of you (my devoted readers) and as always, I am sending you love!

Dark Chocolate Red Wine Cake

 


What is my favorite food? Well, of course it is CAKE!!! And this has been my lucky week! I have been in CAKE HEAVEN!! I am so fortunate to have some great friends and family who love me and are enablers in my CAKE addiction. (Yes, I realize I have capitalized CAKE every time! That is how excited I have been about this past week!!) This past Wednesday was my 37th birthday and I have been fortunate enough to receive three really amazing CAKES (hehehe!!!) to help me celebrate. All of them have been chocolate and delicious. Two of them were homemade, which (if you have been reading) is the way to my heart.

 It all started 2 weeks ago when my sister bought me a marble CAKE with chocolate butter cream frosting.  Then, at work, my co-worker brought a chocolate layer CAKE with strawberry filling and chocolate ganache.  And, a day after that, my guy really branched out with his first foray into baking (he is already an excellent cook) by making a double, dark chocolate layer CAKE and decorating it with cute caricatures of US!!! Can you tell I am smiling while I am writing this?? It was a happy, happy CAKE filled week!!

Now in all my post-birthday glory, I will drag my "post-CAKE eating self" off to the gym at lunch!

Espresso Cheesecake with Dark Chocolate Ganache



OK, I have started this blog at least 15 times and then erased it each time. Usually, I am not so challenged with WORDS! On this post, I can not seem to figure out how to express what I want to say. After much thought and time, (this cheesecake was made for a birthday on Dec 19th) I realized it was not the words that had me stumped, it was the meaning of those words and my concern about sharing too many of my feelings. So.....

You have probably heard the saying "We don't meet people by accident. They are meant to cross our paths for a reason." In September, a really phenomenal person crossed my path in the most unusual way, and he has turned out to be one of the best things that has happened to me! It is true that when you are least expecting it, someone truly amazing can come into your life and makes a huge impact. My guy has done that!

I do not want to say much more than that now. I know... I know!!!! I have shared so much on this blog already. What is the big deal??? I guess, I am just enjoying every minute of NOW! and I want to hold onto it all for a little while longer. This is all very new, and I am so hopeful that in the future, I will have so much to share with you! Just know that right now, this girl is soooo happy and can't wait to see what is to come!

Cranberry Bliss Bars



So what else can we say about this recipe? So many bloggers have made this and shared their ideas, but I had to give it a try. As most people know, this is one of Starbucks' Holiday desserts that people wait all year for! There is good reason for that. Aside from being a sure sign that Christmas is coming, this recipe is just "good stuff." Be warned! It is super sweet ....so you might only want one! In that case, maybe Starbucks is  your best bet, but if you want enough to share, make your own!  It is super easy and unlike Starbucks you will not be paying $4 per bar.

Chocolate Pots De Creme



Happy, happy, happy! What makes you smile? This dessert does it for me. I do not like to classify myself as "typical" anything but in this case, I am a "typical chocolate loving girl!"  Go ahead judge me! You can't get me down with one of these cups of chocolate crème in my hands and maybe all over my face. ;)
Anyway... on a more serious note. My life in general has been really happy lately. Fall is a great time of the year. After the heat of summer, it is time to get outside, enjoy the beautiful fall leaves, the company of friends and a great dark beer. I am hoping that you are finding some Happy in this season as well.  Stop, look around you and find something beautiful in every day!!

Nutella Pizzelles


When I was in college, I bought my sister a gift that I thought that she would love! One of my sister's favorite cookies is an anise flavored pizzelle. Her other favorite is my Gram's anise Biscotti. When I was in college, due to the dorm circumstances, I was pretty challenged in my ability to cook and bake. I went to college before everyone lived in a suite (this is not your invitation to guess my age!) One weekend, I went shopping with a friend and I saw an electronic pizzelle press. I had to buy it for my sister. I had thoughts of her making pizzelles any time she wanted them, in any flavor that interested her. I spent most of the money I had on that shopping trip (and had at all) to get her that pizzelle press.

There was only one problem, I was thinking about what I would do with a pizzelle press, not my sister. At the time, she and I were in very different places when it came to kitchen conquests. Let's just say she was more interested in buying her pizzelles than making them. And I think she still feels that way. I was so excited when I gave it to her, but her face told me that the excitement was not contagious....



Overall I think that I am a good gift giver but I did mess up with the pizzelle maker. I will admit that! This Labor Day when my parents came for their annual visit, they brought that pizzelle maker and approximately 16 years after it was purchased, I pressed my first batch of crisp wafer thin cookies.

Mini Peanut Butter Cup Ice Cream Cakes





So even food bloggers make mistakes..... and this recipe turned out to be one of mine. Every year when we go to the beach, I make my sister something for her birthday dessert. I typically make cupcakes and freeze them, then ice and decorate them when I get there. This year, I spoke to my 6 year old nephew on the phone and he told me he wanted ice cream cakes for his Mom's birthday. He had seen my Whoppers Malted Milk Ball Ice Cream Cake and he was having ice cream dreams. So "Aunt Becky" quickly agreed. How hard could it be?  I already took a huge cooler full of all the dinners for the week. I would make them 2 days before, freeze them and take them in the  cooler. So I set about my task.


OK..... I think you see where this story is going..... After my 8 hour drive to OBX (in typical July heat), I opened the cooler to find totally frozen steaks, chicken and even sweet potato French fries, and there was my perfect plastic container of ice cream slime?!?!?!?!!!! How could this happen? Everything else is frozen... Blah!  As I am dumping peanut butter milk down the drain and picking cupcake papers out before they go into the disposal, my Dad comes into the room and suggests refreezing them. We were way past that point.  "Aunt Becky" had let everyone down. I was not a happy girl, but I was at the beach and no one's feeling seemed too hurt. So, the next day we made strawberry shortcake and celebrated just the same.

Chocolate Chip Cherry Blondies

 

 

Hi Ho Cherry O! These blondies are delish! As we have already established, cherries are my favorite fruit and always make me think of my Grandma Clarke.  When I saw this recipe and the combo of cherries and chocolate, I knew this recipe was for me. And the best thing about it: "It is EASY." I had all the basic ingredients in my cabinet, had just been to the store and was the victim of good product placement; there were huge bags of Bing cherries displayed as soon as I walked in the door. Sucker!! So, one night after work I made these and I have to admit, I ate 3. I know, I know... I have to go to the beach in 1 week... But don't worry, I quickly  had 2 ideas! I wrapped the rest of this batch up and hid them (from myself) to take to work the next day. They were raved over and did not make it past lunch time. And then, the next night I made a fresh batch to freeze for the beach. Evil?? How?? Muhahaha!!!

Strawberry Nutella Milkshake



It is hot here in South Carolina today. So what better recipe to celebrate our last day of Strawberry week then with an ice cold Strawberry Nutella Milkshake. Yes, I said Nutella. I am currently sitting on my porch right now sharing this recipe with you while I sip, sip away.

Whoppers Malted Milk Ball Ice Cream Cake

 

Happy Birthday to Bonbons and Biscotti....

And what better why to celebrate a birthday than with CAKE!!! Not just any cake but ice cream cake- just in time for spring!! There is nothing better than sitting on the back porch in the sun eating ice cream cake- YUM!

OK, there is a reason that I chose this recipe; actually a few. First I love malted milk balls and we have already established my love for dessert, but the need to make this recipe is more about having something that I never got to have for my personal birthdays. Yes, as I mentioned in my previous post, I always had a great birthday with a awesome cake made by my Mom, Toni "the master baker." However,  every year when my little sister's birthday rolled around in sunny June she had a cook out and a Dairy Queen Ice Cream Cake!  I wanted an ice cream cake sooooo bad but as in most small towns in rural Pennsylvania, the Dairy Queen was only open in the summer months. This made a lot of sense for my region. Really, who wants to sit outside on a picnic table and eat ice cream in 2 feet of snow? Since I was born on a blustery day in late January, an ice cream cake (or a cookout!!!) was never a possibility for me.  My birthdays were always rushed events that people came to, ate and left before the roads got to snowy to travel.  In their own way, my birthdays were festive and memorable but to this day... still no ice cream cake. Well, by making this cake I have solved that dilemma. Now I can have decadent chocolate cake on my birthday in January and mile high ice cream cake for my blog's birthday.  I am a happy girl!



I want to personally say thank you to all of you that followed my blog and watched me grow in this past year. As I have noted, I have had some hard days these past 2 years and every time I get a note of encouragement or hear that someone else has read my blog or tried one of my recipes, it warms my heart. I hope that I have inspired some of you as well. Remember Love Begins In The Kitchen... show someone that you love them.

Bourbon Spiced Shortbread Cookies







I am so excited to be participating in the Great Food Blogger's Cookie Swap 2012. I have received some great cookies in the mail from a few very talented bloggers. I have to give a shout out to www.wineandplum.com for their delicious Chinese Chai cookies,  www.travelerinthekitchen.blogspot.com for the scrumptious Peppermint Mocha Cookies and Praline Cookies from www.sweetjeanette.com . I  must admit that this is the first time that I had to send food through the mail and was a little anxious. I typically make soft cookies or something fruit or cream filled which would not have worked for this purpose, considering one of my recipients was in Seattle. I had to put on my thinking cap.... I  asked a lot of friends who benefited from my baking in the past; what cookie that I make is their favorite? I began getting text messages, emails, and people bringing me new recipes that they wanted me to bake because they did not feel that they could. This really gave me a lot of great feedback but once again the "cookie suggestions" were not mail appropriate.

So, last weekend, after Thanksgiving gorging and Christmas tree engineering, I sat down surrounded by manila envelops of family recipes, cookbooks, and my horded recipes that I have cut and gathered over the years. Quickly, after I started digging,  I remembered this simple, little gem. I used to make this cookie every Thanksgiving in little maple leaf shapes. They were so cute and tasty and provided the perfect "not so sweet" alternative dessert.  For the past 2 years in my life's upheaval, I had forgotten this cookie. It had missed Thanksgiving.... but, unfortunately, so had I.

Sometimes, life changes and takes a direction that you don't expect. Mine really has.  From my experiences, I have learned one thing: the great things in life all come back into your life. They are ever-present. In the past 2 years, I have rediscovered great friendships, grown a lot stronger relationship with my little sister and parents, learned to reappreciate the little things and reimmersed myself in things I really love, including this blog. I believe that sometimes this circle of life and change gives you little signs of hope to keep you going. My little, lost cookie is back and although minor to most, it is a great sign.  With every little thing that reappears in my life now, I know that all will be OK. I know that I have come full circle.  I know that there is Hope. And isn't that what Christmas is all about....

Gobs AKA Whoopie Pies






So here I am... in a  'baking emergency." As you all well know, I am baking/ blogging for a purpose (of course you all have read my About...) Tonight, the purpose is to distract my overly busy mind, to make something that reminds me of home and to feel comforted.  As you have probably guessed, I had a shitty day!!

In the past year, I have taken to my bed when the "going has gotten really, really tough."   I am not ashamed of that fact, but tonight after driving around aimlessly for a while, talking to my little sister, and having some BFF intervention, I began to crave what is comforting to me.  I needed to be busy and what better way than to bake. Still in my work, dress clothes I begin to dig through cabinets. I needed something that is home; PA home that is. I also wanted something chocolate. What better recipe than Gobs; a western PA favorite?? As I began to mix, measure and muse ( baking therapy at it's best),  I realized that nothing is going to keep me down; no matter the pain, no matter the obstacle, I will persevere. I am strong, I am beautiful, and I am worthy of the best things in life. And while the escape of my bed can make me feel good for a little while, I am a "stand up and fight kinda girl." I am my Daddy's girl. I say it how it is, never back down to something I truly believe, and love those who love me back with every ounce of my soul.

As you all know, my blog's logo is... Love Begins In The Kitchen.  Tonight I wasn't mixing up love for others. I was prepping myself to be a stronger person and mixing in a whole lot of love for the most important person in my life..... ME!

OK... I will admit a few Gobs helped in that strength process. Ahhh chocolate.....

Reese's Peanut Butter Cup Peanut Butter Cheesecake


If you LOVE Peanut Butter Cups you have to make this cheesecake!!

One thing that I love to do is make some one's birthday a little more special by baking them something that is really fabulous. Usually I end up choosing something complicated, I am not sure why.... I guess it is my chance to try out some really amazing recipes that I have been hoarding and not have to eat the whole thing by myself!  Sometimes, after spending 4-6 hours on one of these recipe endeavours, the finished product is truly a labor of love. So why do I do it? Because in my family, my Mom always made sure that we had a beautiful, homemade cake of our choice; one that would set the theme of our birthday. My sister and I would wait and watch her construct a cake in different shapes or characters, excited about every piped rose or scalloped edge of icing that was lovingly put on our cake. Then, at our party, dressed in our new birthday outfit,  we would proudly sit behind our Alf or Pink Palace Cake and get that important birthday cake picture. Some of those pictures are the best of my childhood;  with a huge smile and light in my eyes. I was always so proud of my cake but I was always more proud of my mom! Although she had her Master's in Education, she decided to give it all up for a little while to raise my sister and I.  Early on in that process, she was gifted a cake decorating kit from my Grandma C. Whether out of boredom or her love for all things artistic, she began to practice her "cake art skills." Soon with the encouragement of others, she had a pretty popular cake business. Since she is artistic, friends and family could bring her a napkin with E.T. on it or a picture of their favorite 57 Chevy and she would draw the design freehand, transfer it to the cake and with piping bags and icing, make it come to life. Due to the time and love she put into each cake, her cakes were in high demand and her customers really appreciated the chance to have a custom cake.

Until I left my parent's house, my mom made every birthday cake that I ever had. She also took on the large task of making my sister and my wedding cakes. Every one of the cakes that were made for me are still special to me. The memory of cakes being prepared and decorated in my house is something that  I associate with my childhood (it is one of those "kitchen memories" that I spoke about in my "About" section.) My Mom's cakes were ever present in our house, as were the happy people who would come to pick up her masterpieces. In our little community, my Mom helped many families celebrate their birthdays, weddings, retirements and all of life's big milestones.  She became part of their personal stories; part of their history.

I guess in some way, I hope to do the same thing. I bake for others to show my love, to see them smile, to let them know I appreciate them and to become part of their personal history...

So this is a hard one to write y'all. If you have followed my blog at all you know that this whole thing started as a way to vent during a hard time in my life (as well as a simple way to document my life as it is in present time.) It is also a way to revisit my heritage and recipes that have been my family recipes for years. I think, up until this time, I have used this blog to revisit where I am from and what I have been through and you all have helped me in that journey. And by no means has that journey stopped, I am just hoping that it has evolved....
Let me start by saying that, at times, in life as a relationship evolves or become stagnant, it can either change and improve or disappear. I am at that stage....

I am doing all that I can to change. I have been working for quite a while at getting ME back.  I have made this blog to help in the process of transformation.  In the past year, as you know, I have had hardship in my personal life, (hello newcomers, read my About section, LOL!) but these past two weeks I have taken it upon myself to ask another for a change; a change that I wanted for for a long time but was unable to go after.   In the past year, I have worked so hard to become the stronger person that I am. I have made stronger personal relationships, family connections and business commitments.  But most importantly, I have renewed strength in my personal and love requirements and I hope that will make all the difference.

At times, in life, I have learned through my experience, and through some trusted friends experiences (who I love more and more each day because they were willing to share their heartache with me,) people loose sight of what is important.  For whatever reason, life has a way of throwing each of us into situations that, at the time we are not ready to deal with.  While it might break us for a while, and distract us in our path, it does not mean we don't know the way.... It just makes us more able to define ourselves and what as individuals makes us happy. And there is nothing wrong with a little self discovery, as long as it leads you in the right direction in the end. In the past year, this is a path that I have traveled.

There are some really scary questions I have been asking myself lately.  Will my personal  change come in enough time???? Will others be able to forgive???? Can love overcome everything else????..... And unfortunately, I don't have those answers but I am ever hopeful and full of love and commitment.

I have included this recipe for this post because it is a super simple recipe that anyone could make. It was one of my Mom's favorites for that reason. I am not sure where she got it, but it was a staple in my house growing up and still is present every year at our beach trip and multiple other occasions. In this post, I have changed the original to make it evolve with the times; a little complicated, a little difficult to define but still the original recipe we all fell in love with;  a lot like the people I hold dear... Is your recipe ready to evolve.... to become better than it ever was.... to change.....  mine is!

Cannoli Cupcakes

This is a recipe that combines two of my favorite desserts and definitely a lot of my favorite flavors. I am a sucker for a cannoli of any type and cupcakes are one of the most indulgent things in life.

Cannoli always remind me of my Mom. That has been one of our favorite desserts for as long as I remember; no actually since our days of going to the beach in Maryland when I was a child. On one special night, we would walk down the boardwalk in Ocean City to get our cannoli fix. It was something that we did every year and I think that this became our special dessert because we only got them one time per year. As time changed and the years passed, we quit going to Ocean City and so no more "Beach Cannoli" that we looked forward to every year.

Sometime in my early college years, I think I was a freshman, I came home for the summer and wanted to make my Mom cannoli for her birthday. I sprung this idea on my Dad and explained that I needed port wine for the recipe.  At the time, I was not yet able to purchase alcohol. In his always silent, supportive way he headed off to the store to score our wine.  Before I had left school, I had purchased a set of cannoli shell forms at a culinary shop at the local mall. When Dad got home, we started our task and what a task it was!!! We still reminisce about this and just shake our heads. For two people who are familiar with the kitchen and culinary techniques, we had a cannoli frying mess on our hands!!

I jumped right in and started the production but could not get the dough to stay on the form. As I dropped them in the hot oil, they would quickly unfold and bloom almost flower like and then puff up like a giant elephant ear. My Dad stepped in thinking that he could master the concept- Fail! We both stood there with oil popping out of the pan burning our arms and fingers and not sure what to do next....

To make an already long story short, that birthday my mom got a few cannoli that we salvaged toward the end of the production when we finally got the hang of it. The rest were turned into "cannoli shell chips" which we ate with the filling -chips and salsa style. And truthfully no matter the shape they tasted great!!!

This cupcake was inspired by my love for cannoli and thank the kitchen gods, it was much more simple than my original cannoli adventure.

While I was home visiting my family in PA, aside from visiting my sister, parents, grandparents and all other family, I had the opportunity to go through some things that had belonged to my Grandma Ethel. One of the prized things that I spent a lot of time sorting through, was her recipe file. Some of the recipes were old original copies that where written in my Grandma's perfect hand writing; some were stained from being present when she was baking. Others, were just clippings from a magazine that I assume she had saved for a later day.  I sat in the living room of my parent's house and went through each recipe one by one. It was a rainy day and as I was sorting my Dad was sitting there in his chair.  As I came across something I thought was interesting, I would share it with him.  He laughed at some of the recipes stating that my grandma would never have made that or that he never remembers eating some of the concoctions. Other recipes he definitely remembered and some he even seemed sentimental about. It was a nice afternoon spent with him. My dad is a man of few words but sometimes just the time spent together says everything; no words needed....

I made a batch of these to see how they turned out and to try my newly fixed oven. They were melt in your mouth amazing. I took them to work and they were gone fast!  I can not wait to make another batch to share with my family at OBX 2012.
