Smoked Whole Chicken

 


So this is something that I have wanted to try for a long time! I love smoked meat of all kinds and for the past few years I have wanted a smoker. Well, this summer I joined one of those Facebook online garage sale feeds to get rid of a few things from my past life- an huge area rug I have no use for, some golf clubs that never inspired me to actually play and a few pieces of clothing that were brand new and too big (Yes!!!)  I needed to purge and as most of you know when that feeling hits, you gotta do it! So I had a pretty successful run of getting rid of my crap and making a little extra money. The thing is when you join these sites, you also get front row seating and first dibs on other people's no-longer prized possessions. (I think you are beginning to see how this ends.)  As most of you know, these garage sale sites get quite a bit of attention and if you do not have a knee jerk reaction to an item you lose! So this smoker popped up and I quickly typed, "I want it."  I then pressed send and held my breath!  I was first in queue!! Whoohooo! After much negotiation of where to meet, when to meet and which gas station had an outdoor electrical outlet so I could see it work, I was the proud parent of a new electric smoker. And the best part is, I paid seventy-five percent off the retail price. Cha-ching!!

So now my adventures in smoking have begun. Yes, I know BBQ and smoking purists, I did say it is electric! And you can argue that this is not the "pure" smoker's technique, but this first timer is having a ball learning the basics. Perhaps next year, I will be cruising Facebook garage sale ads and find one of those huge pull behind, (a dually truck, of course) full pig smokers!!! Then you better watch out!! I might take this blog on the road!!

Cinnamon Toffee Ice Cream on Grilled South Carolina Peaches




It is officially SUMMER!! And what is better this time of year than ice cream and fresh grown local peaches??

These past few weeks, here in South Carolina, we have been "treated" to true summer weather in the south. Everyday, it has been well over 90 degrees. Ugggg.... There is nothing more horrible than getting into your car at the end of the day and your car saying that it is 105 degrees. Some days, you can barely touch the steering wheel.  At first, when I moved south in 1999 (from the frozen tundra of Pennsylvania), I thought that the heat was going to be the death of me.  I remember several times gasping as I walked outside and telling friends that I could not breath. I was feeling as though the humidity was going to suffocate me. Since then, I have learned to look at the hot summer months more as a compromise for the temperate fall, winter and spring. Thinking now.... If given the option of shoveling 3 feet of snow in freezing cold conditions or sweating a little downtown while watching a band and having a cold beer on a Friday night- I choose that cold beer!



One of the jewels of this area is the great produce that we have in abundance. Whether you are a local Carolinian or a transplant like me, the one season that everyone looks forward to here is peach season. We follow the peaches from the first buds on the trees in very early spring, through every frost that might damage the crops, until the time we bring home our first basket of pure South Carolina goodness.  Most people here await that first peach of the season because it is one of the true signs of summer. Lucky for us, this years peach crop has turned out to be prolific and we are loving every single bite!!

Baba Ganoush



So what do I do when I am stressed and feel like life is not going my way??? Anyone paying attention out there??? I cook!! And in this case, I knit as well. (Uh Ohh! that is not a good sign.) This weekend has been a trying one but unfortunately my life has been this way for so long that I know that "busy is best." So I planned doctor's appointments, craft parades, event with friends and lots of activities for this weekend. I have been fairly successful.... NO! I am proud of myself and I will say I have done excellently, considering. (If you are lost, you have not been reading often.... shame! Lol!)



So this morning when my wonderful, sweet pups who love me dearly, woke me up at 7am  on my only day off, I needed something to do. (Do you sense the sarcasm here?) Thankfully, one of my employees and friends brought me 6 Japanese Eggplant and boy did I have plans for them. Here is the outcome and it is fabulous! Once you eat this you will never order Baba Ganoush at a restaurant again when you can make it so easy! I promise. It is smoky, garlicky goodness!

Grilled Strawberry Balsamic Brie Sandwich


OMG! This might be the best thing that I have ever made!!

Anyone that knows me knows that I am not a "sandwich kind of girl." I know that sandwiches are portable and convenient to eat almost anywhere, but it is just not my thing. Give me good bread, some cured meat (ie prosciutto or salami) and a little cheese and I am in heaven.  I think one of the reasons that I do not like the common sandwich is because most everyday sandwiches or "sandwich places" use lunch meat / cold cuts / deli meat or whatever you want to call those slivers of fatty sliminess. A slice of deli ham makes my skin crawl in ways that most people can only contribute to creepy crawly things. Can you say fatty, salty, chemical laden and most important of all, did this really come from an animal?

But this sandwich, now this sandwich... I can eat everyday. It has simple ingredients and simple tastes. The sweet strawberries, crusty bread and the creamy, buttery cheese are amazing together. The little tang of balsamic really adds depth and a dynamic to the whole thing. This was the sandwich of my dreams! If Subway would start pumping out something this fresh, I would be the first in line. But instead of holding my breath on that thought, I will make my own strawberry sandwiches. I think I am addicted.....



In this post, I want to pay homage to my Dad who made me this awesome baking board and carved the wooden spoon in the picture. I have toted this board around with me for the past 10 years. It is huge and smooth and perfect for rolling out any dough. It is one of my prized possessions. Remember our motto here at Bonbons and Biscotti- Love Begins In The Kitchen.  I think of this board as a little piece of love I keep with me in my kitchen. It is heart warming to have a little of my family's love around always.

Melon & Chicken Herb Pasta Salad

What is better summer eatin' than a pasta salad?  I woke up this morning to make a fab pasta salad for a friend and I to snack on while we were downtown at the Fidelity Moonlight Movie in Falls Park. I love this event. Every Wednesday night in May and September here in Greenville, SC they transform the park downtown into an outdoor movie theater. It is a BYOP (bring your own picnic) and BYOB event and it is tons of fun. A few friends introduced me to this event last year and this year my goal was to go as often as possible. Unfortunately, due to the gloomy, cold weather we have been having here in SC we never made it to the movie but we did eat some awesome salad!   I was so excited with the results that I had to share them with you. I plan to go next week though so if you are there, let me know and we can share some good eats.

When I got my issue of  Eating Well Magazine this week, I was so happy to see a whole section on healthy pasta salads. I grew up eating pasta salad at every summer cook out or picnic and while they were tasty, they were laden with pepperoni and tons of cheese. The concept in this magazine is: 1. Pick a Pasta, 2. Load Up with Veggies, 3. Add Lean Protein, 4. Boost Flavor and 5. Dress It. It is really so simple and can be as healthy as you want. In this recipe, I chose to use quinoa pasta which was a personal choice since I am trying to limit my wheat intake but you can choose any pasta that you might love. I chose fresh herbs that I have on my back porch and chicken that I had grilled the night before. This recipe really was so easy and quick. I look forward to using this concept to make many pasta salads this summer. Tune back in for my latest creations!

Bourbon Peach BBQ Ribs

Bourbon Peach BBQ ribs are for dinner tonight.

So I have been really hungry for some sticky BBQ ribs and by now if you have been following my blog, you probably realize that when I am craving something, I rarely go out and buy it. I usually make it. So this past weekend, a very good friend came over to watch the Olympics opening ceremonies and I took this chance to cure my craving. I made us ribs!
Although this is a long process, it is so worth it. Saucy and delicious! I do admit, sometimes if I am in a hurry, I use store bought sauce but this recipe is quickly becoming one of my favorites so I want to share. I wish that I could share by giving you each a sticky sweet bourbon rib but maybe I will inspire you to make your own!

BTW I refrained from posting the pics of us licking our fingers after dinner!

Grilled Rosemary Lime Chicken (Green Chicken)

This past weekend, I had a few friends over to celebrate summer and my move to by new house. It was a huge success. We all had some great food, conversation, and cocktails followed by some ladder ball and a few more cocktails. Life on the porch is how I grew up and how I love to spend my summer evenings. If you knock on my front door and there is no answer come around to the back porch and more than likely you will find me and Charlie (my golden retriever) in the garden or sitting on the back porch.

The next few recipes that I am about to post are going to be my party fare. I came up with a unique menu with few recipes I had stashed away for a later time. The full menu consitisted of:

Signiture Drink:
Strawberry Riesling Slushies
Woo Woos

Appetizer:
Beet Hummus, Goat cheese Mint Crostini
Hummus Goat Cheese, Basil Crostini

Entree:
Rosemary Lime Grilled Chicken
Grandma Ethel's Calico Baked Beans
Rosemary Deviled Eggs
Minted Couscous Salad- (Provided by my friend Ginny)

Dessert:
Cannoli Cupcakes
